Tuna and Rice
Ingredients
1 Large can Tuna in Brine (cheapest is fine)
1 Large can Diced Italian Tomatoes
1 cup of Tomato Paste
2 tsp. garlic
1 Tbsp. oregano
1 large green capsicum (pepper)
Water
1 cup Aborio Rice
Grated cheese to top.
Pepper to taste.
1 Tbsp. olive oil
Directions
Pre-heat oven to 220 degrees C (430 degrees F or thereabouts). Dice the capsicum. Heat oil in a pan and capsicum, stir for 1-2 minutes. Add aborio rice, stir to coat. Add can of tuna and can of tomatoes - do not drain them. Add the paste and herbs and mix well. Fill the tomato can with water, add and stir.
Once the mixture is slightly thick transfer it to a baking dish. Top with grated cheese. Bake in oven for 40-45 minutes, until rice is tender. Serve with a crisp garden salad.

Thanks for this Sarah, for this easy recipe of pantry items. I added olives and sundried tomatoes, which were on-hand. Great recipe.
