Tuna and Rice
- 1 Large can Tuna in Brine (cheapest is fine)
- 1 Large can Diced Italian Tomatoes
- 1 cup of Tomato Paste
- 2 tsp. garlic
- 1 Tbsp. oregano
- 1 large green capsicum (pepper)
- 1 cup Aborio Rice
- Grated cheese to top.
- Pepper to taste.
- 1 Tbsp. olive oil
Pre-heat oven to 220 degrees C (430 degrees F or thereabouts). Dice the capsicum. Heat oil in a pan and capsicum, stir for 1-2 minutes. Add aborio rice, stir to coat. Add can of tuna and can of tomatoes - do not drain them. Add the paste and herbs and mix well. Fill the tomato can with water, add and stir.
Once the mixture is slightly thick transfer it to a baking dish. Top with grated cheese. Bake in oven for 40-45 minutes, until rice is tender. Serve with a crisp garden salad.
