Today's Recipes


Deep Dish Taco Squares

Ingredients

  • 1/2 lb. ground beef
  • 1/2 cup sour cream
  • 1/3 cup mayonnaise or salad dressing
  • 1/2 cup shredded sharp cheddar cheese
  • 1 Tbsp. chopped onion
  • 1 cup Bisquick baking mix
  • 1/4 cup cold water
  • 1 to 2 med. tomatoes, thinly sliced
  • 1/2 cup chopped green pepper

Directions

Heat oven to 375 degrees F. Grease square baking dish, 8x8 inch. Cook and stir ground beef until brown; drain. Mix sour cream, mayonnaise, cheese and onion, reserve. Mix baking mix and water until soft dough forms. pat in pan, pressing dough 1/2 inch up sides. Layer beef, tomatoes and green peppers in pan; spoon sour cream mixture over top. Sprinkle with paprika, if desired. Bake until edges of dough are light brown, about 25-30 minutes. Serves 5-6.

Sweet and Sour Spareribs

Ingredients

  • 5-6 lb. pork spareribs or pork loin back ribs
  • 1/2 cup packed brown sugar
  • 1/2 cup sugar
  • 2 Tbsp. cornstarch
  • 1 cup ketchup
  • 2/3 cup vinegar
  • 1/2 cup cold water

Directions

Place ribs on a rack in a large shallow roasting pan. Bake, uncovered, at 350 degrees F for 1 1/2 hours. Meanwhile, combine sugar and cornstarch in a medium saucepan. Stir in ketchup, vinegar and water; bring to a boil. Cook and stir until thickened and clear. Remove ribs rack from pan. Discard fat. Place ribs back in roasting pan; pour about 1 1/2 cups of sauce over ribs. Bake 30 minutes longer. Cut ribs into serving-size pieces; brush with remaining sauce. 6-8 servings

Norwegian Parsley Potatoes

Ingredients

  • 2 lb. small red new potatoes
  • 1/2 cup butter or margarine
  • 1/4 cup chopped fresh parsley
  • 1/4 tsp. dried marjoram

Directions

Cook potatoes in boiling salted water for 15 mintues or until tender. Cool slightly. With a sharp knife, remove one narrow strip of skin around the middle of each potato. In a large skillet, melt butter; add parsley and marjoram. Add the potatoes and stir gently until coated and heated through. 6-8 servings.

Pecan Sandies

Ingredients

  • 2 cups butter or margarine, softened
  • 1 cup confectioners' sugar
  • 2 Tbsp. water
  • 4 tsp. vanillla extract
  • 4 cups flour
  • 2 cups chopped pecans
  • Additional confectioners' sugar

Directions

In a mixing bowl, cream butter and sugar. Add water and vanilla; mix well. Gradually add flour; fold in pecans. Roll dough into 1 inch balls. Place on ungreased baking sheets and flatten with fingers. Bake at 300 degrees F for 20-25 minutes. Cool on a wire rack. When cool, dust with confectioners' sugar. About 5 dozen

Chocolate Chip Pudding Cake

Ingredients

  • 1 box chocolate cake mix (any kind)
  • 1 box (3 oz.) chocolate pudding mix-instant
  • 12 oz chocolate chips
  • 1 3/4 cups milk
  • 2 eggs

Directions

Mix all ingredients together and pour into bundt pan sprayed with non stick cooking spray. Bake at 325 degrees F for 1 hour. Dust with powdered sugar.

This cake is a bit rich but so good.

Weight Watchers Banana Cream Pie

Ingredients

  • 1/2 cup sugar or fat free vanilla pudding (prepared with skim milk)
  • 1/4 banana, thinly sliced
  • 2 tbsp. cool whip free
  • small handful of honey graham thin crisps (100 calorie pack) crushed

Directions

Place pudding in small dish, spread bananas over it. Smooth cool whip on top of bananas then place crushed graham snack on top.

1 Pie is 143 calories, 0.5 G fat, 22 carbs, 1.25 G fiber, 1 g protein = 3 ww points
