Cheddar Cheese in Cider
If you like a slice of cheddar on apple pie, try adding some slivers to the bottom of hot apple cider. It's a gooey delicious, nutritious treat to be eaten out with a spoon once the cider's gone.

Skid Row Casserole
Ingredients
- 8 oz. uncooked noodles
- 1 beef bouillon cube
- 1 garlic clove, minced
- 1/3 cup onion, chopped
- 2 Tbsp. cooking oil
- 1 lb. ground beef
- 2 Tbsp. flour
- 2 tsp. salt
- 1/2 tsp. paprika
- 2 cans mushrooms
- 1 can cream of chicken soup
- 1 cup sour cream
- parsley, chopped
Directions
Start cooking noodles, first dropping a bouillon cube into the noodle water. Brown the garlic, onion and crumbled beef in the oil. Add the flour, salt, paprika and mushrooms; stir and let it cook 5 minutes. Then add the soup and simmer it; cook on low under boiling point for 10 minutes. Now stir in sour cream, keeping the heat low so it won't curdle and let heat through. Serve in on noodles and sprinkle parsley on top.

German Chocolate Cake Cookies
Ingredients
- 1 German Chocolate cake mix
- 2 eggs
- 1/2 cup veg. oil
- 1/2 cup oatmeal
- 1 cup chocolate chips
- 1/2 cup crushed walnuts (optional)
Directions
Mix ingredients all together and roll into small balls in the palm of your hands. Put cookie on cookie sheet and press down centers with a fork. Bake at 350 degrees F for about 8 to 10 minutes. Leave on cookie sheet a minute to cool, then take them off the cookie sheet.

Celery and White Bean Soup
Ingredients
- 2 Tbsp. vegetable oil
- 3 cups thinly sliced celery
- 1 cup diced onion
- 1 cup carrots, cut in matchsticks
- 2 cans white kidney beans (may use Great Northern, undrained - I usually use 4 cans total)
- 2 cans ready-to-serve chicken broth
- 1/4 tsp. rosemary leaves, crushed (opt.)
- grated Parmesan cheese
- finely diced celery
Directions
In a large saucepan, heat oil until hot. Add celery, onion and carrots; cook stirring occasionally, until celery is crisp-tender, about 5 minutes. In the container of blender, place 1 can white kidney beans; puree until smooth. Add to saucepan. Stir in remaining can(s) of beans, chicken broth, and rosemary. Bring to boil; reduce heat and simmer, covered, until carrots are tender and flavors are blended, about 10 minutes. Sprinkle with Parmesan cheese. Garnish with finely diced celery, if desired.

Lo-Cal Banana Angel Food Dessert
Ingredients
- 1 large angel food cake
- 2 packages. instant vanilla sugar-free pudding, made by box directions (3 oz. each)
- 3 bananas
Directions
Break cake into bite-sized pieces in bottom of 9x13 inch pan. Pour pudding, with bananas mixed in, over cake. May top with Cool Whip. Chill.

Wonderful Cheesy Shells
Ingredients
- 1 pkg. (16 oz.) medium pasta shells
- 1 pkg. (8 oz.) Velveeta cheese, cubed
- 1/3 cup milk (2% ok)
- 2 cups cottage cheese (2% ok)
- 1 can (10-3/4 oz.) condensed cream of onion soup, undiluted
- 3 cups shredded Mexican cheese blend
- 2/3 cup dry bread crumbs (Italian seasoned are good too)
- 1/4 cup butter or margarine (not spread), melted
Directions
Cook shells according to package directions. Meanwhile, in a large saucepan, combine the Velveeta cheese and milk; cook and stir over low heat until melted. Remove from heat. Stir in cottage cheese and soup. Drain pasta and add to cheese sauce; stir until well coated.Transfer to a greased 13x9x2 inch baking dish. Sprinkle with Mexican cheese blend. Toss bread crumbs with butter and sprinkle over the top of all. Bake, uncovered, at 350 degrees F for 30 to 35 minutes, or until heated through.
Servings: 6

Vinegar Pie
Ingredients
- 3 eggs
- 1 1/2 cups melted butter or margarine
- 2 1/2 Tbsp. dark vinegar
- 1 cup sugar
- 1 pie shell (9 inch), unbaked
Directions
Beat eggs until foamy. Add butter, vinegar and sugar. Mix well and pour into pie shell. Bake at 450 degrees F for 10 minutes. Reduce heat to 300 degrees F and cook until pie is set or until knife in center comes out clean - about 30-40 minutes.

Tender Meat for Easy Chewing
Hard boil meat (be it beef, chicken or pork) in 2 boullion cubes and 16 ounces of water for the most tender meat that even a small child can eat without teeth or an adult without their dentures. Take the meat flavored water to make a low calorie gravy with the directions that are on any corn starch box. This is the only way I have made gravy in over 20 years, IT IS THAT GOOD AND EASY.
Doing any meat this way is also much easier on me. Get the water to a full rolling boil before adding but cut up pieces of meat and boil hard for about 10 to 15 minutes (depending on how well you like your meat done).
