Crockpot Corned Beef and Cabbage

I always do my corned beef in the crock pot. My question is, at what time during the cooking do i put in the potatoes and cabbage? My cabbage always turns out mushy. I usually cook on high. Thank you for your help.

Citrus Breakfast Puff

Ingredients

  • 1/4 cup butter or margarine, divided
  • 2 eggs
  • 1/2 cup flour
  • 1/2 cup milk
  • 1 Tbsp. granulated sugar
  • 1/4 tsp. salt
  • pinch nutmeg
  • 1/2 lemon
  • orange marmalade
  • powdered sugar
Directions

Preheat oven to 425 degrees F. In 10 inch ovenproof skillet, melt 2 Tbsp. of the butter; set aside. In medium bowl, beat eggs. Add flour, milk, granulated sugar, salt and nutmeg; beat until smooth. Melt remaining 2 Tbsp. butter; blend into batter until smooth. Pour batter over melted butter in skillet. Bake 15 minutes. Reduce oven temperature to 350 degrees F. Bake 10 minutes longer or until puffed and golden brown. Squeeze juice from lemon over puff. Spread desired amount of marmalade on top; sprinkle with powdered sugar.

Harvest Apple Salsa with Cinnamon Chips

Ingredients

  • 2 Tbsp. sugar
  • 1 tsp. ground cinnamon
  • 4 flour tortillas (8 inch)
  • Salsa
  • 2 medium Granny Smith apples, chopped
  • 1 medium pear, chopped
  • 1/2 cup chopped seedless red grapes
  • 1/2 cup chopped celery
  • 1/4 cup chopped walnuts
  • 1 Tbsp. packed brown sugar
  • 3 Tbsp. orange juice
  • 2 tsp. grated orange peel
Directions

Preheat oven to 475 degrees F. For cinnamon chips, combine sugar and cinnamon in small bowl. Brush tortillas with water. Sprinkle sugar mixture evenly over tortillas. Cut each tortilla into 8 wedges; arrange on baking sheet. Bake 5-7 minutes or until golden brown. Remove to wire rack to cool completely. For salsa, combine all salsa ingredients in large bowl. Serve salsa with cinnamon chips.

Apple-Cranberry Crumble

Ingredients

  • 3 cups peeled, chopped apples
  • 2 cups fresh cranberries
  • 1 cup granulated sugar
  • 1 cup rolled oats
  • 1/2 cup packed brown sugar
  • 1/3 cup flour
  • 1/2 cup chopped pecans
  • 1/2 cup butter or margarine
Directions

Preheat oven to 350 degrees F. In greased shallow 2 quart baking dish, combine apples, cranberries and granulated sugar. In medium bowl, combine oats, brown sugar, flour and pecans. Sprinkle oat mixture over fruit. Dot with butter. Bake 35-45 minutes or until fruit is tender and topping is browned.

Easy Quiche Lorraine

Ingredients

  • 1 pastry shell (9 inch), unbaked
  • 8 slices bacon, cooked, drained and crumbled
  • 2 cup shredded Swiss cheese
  • 3 eggs, lightly beaten
  • 1 3/4 cup milk
  • 1 Tbsp. flour
  • 1/2 tsp. salt
  • 1/8 tsp. ground nutmeg
Directions

Preheat oven to 450 degrees F. Bake pastry shell 7 minutes or until lightly browned. Reduce oven temperature to 325 degrees F. Reserve 2 Tbsp. bacon. Sprinkle remaining bacon and cheese over bottom of pastry shell. In medium bowl, combine eggs, milk, flour, salt and nutmeg. Pour egg mixture into pastry shell; sprinkle with reserved bacon. Bake at 325 degrees F for 35-40 minutes or until knife inserted in center comes out clean. Cool 10 minutes before serving. 6-8 servings.

A St. Pat's Day Feast!

You don't have to be Irish to have fun on St. Patrick's Day. Why not surprise your family with a meal all made of green foods!

How about celery, grapes, limes, cucumbers, kiwi, broccoli, sherbet, lime jell-o, green salad, coleslaw? I am sure you can think of lots of others.

You can make almost any food green using green food coloring. Add a few drops to the water when cooking pasta and you will have green pasta. Add a few drops to pancake batter, or muffin batter.

Here are a couple recipes your children can help you make:

Green Spaghetti

  • 1/2 pound spaghetti, cooked
  • 3 packed cups basil leaves
  • 1 small clove garlic
  • 1/4 cup parmesan cheese
  • 1/4 cup olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Have your child take all the basil leaves off the stems. Put the leaves into the food processor. Smash and peel the garlic. Add it to the basil and blend. Add the cheese, oil, salt and pper and blend til it forms a thick paste, called pesto.

Add the pesto to a bowlful of hot spaghetti and mix with a fork.

Watergate Salad

Mix together:

  • 1 small box pistachio instant pudding
  • 1 small tub whipped topping
  • 1 can crushed pineapple, undrained
  • 1/2 cup chopped pecans
  • 1 cup mini marshmallows

Chicken Fried Steak

I've had this recipe for many years and when moving to the south I added another ingredient, Old Bay Seasoning.

Ingredients

  • 2-3 pounds round steak, tenderized (or ask butcher to tenderize it for you)
  • 1 cup flour
  • 1 tsp. salt
  • 1 tsp. garlic powder
  • 2 tsp. Old Bay seasoning or Paprika if you can't find Old Bay
  • ground pepper (I use fresh ground)
  • 2 eggs, beaten
  • 1/2 cup of milk (2% is fine)
  • Vegetable oil

GRAVY:

  • 1 Tbsp. butter or margarine
  • 6 Tbsp. flour
  • 3 cups milk (2% ok)
  • Salt and Pepper
Directions

Cut steak into 4 pieces.combine the flour, salt, garlic powder, Old Bay or paprika, and pepper on a plate.

Combine eggs and milk in a bowl. Dip steak into the egg/milk mixture, then coat with the flour mixture. (I double dip). Cook steaks in hot oil in a heavy skillet. Remove steaks and keep warm. Add butter to skillet and mix with the drippings. Add flour and cook and stir until flour browns. Add hot milk and stir until thickened. Season with salt and pepper and pour over warm steaks. Enjoy!

Chicken Divan Pie

Ingredients

  • 1 1/2 cup cooked rice
  • 4 eggs, divided
  • 1 cup shredded cheddar cheese
  • 2 Tbsp. flour
  • 1 cup milk
  • 1 cup chopped cooked broccoli
  • 1 cup chopped cooked chicken or turkey
  • 1/4 cup chopped green onions
  • 1/4 tsp. salt
  • dash pepper
  • 1/4 cup grated Parmesan cheese
Directions

Preheat oven to 350 degrees F. In small bowl, combine rice and 1 of the eggs; mix well. Press rice mixture onto bottom and up side of lightly greased 9 inch pie plate. In large bowl, toss cheddar cheese with flour. Add remaining 3 eggs, milk, broccoli, chicken, onions, salt and pepper; mix well. Pour over rice crust. Sprinkle with Parmesan cheese. Bake 50-60 minutes or until set in center. Serves 6-8

Cheesy Hash Brown Bake

Ingredients

  • 1 package southern-style frozen hash brown potatoes, thawed
  • 2 cup shredded cheddar cheese
  • 1 can condensed cheddar cheese soup
  • 1 cup sour cream
  • 3/4 cup sliced green onions
Directions

Preheat oven to 375 degrees F. In large bowl, combine all ingredients. Spread mixture in greased 9x13 inch pan. Bake 50-60 minutes or until lightly browned and bubbly. 10-12 servings.
