Methodist Pie

Ingredients

Crust:
  • 18 graham crackers
  • 2 Tbsp. sugar
  • 1/4 cup or 1/4 lb. butter, melted
Filling:
  • 1 1/2 lb. cream cheese
  • 3/4 cup sugar
  • 3 whole eggs
  • 1 tsp. lemon juice
  • 1 pinch salt
Topping:
  • 1 pint. sour cream
  • 2 Tbsp. and 1 scant tsp. vanilla

Directions

Roll crackers; mix sugar and butter together. Add cracker crumbs and mix well. Line a 10 inch pie pan with graham cracker crust mix. Beat cream cheese thoroughly until fluffy. Add well beaten eggs, sugar and other ingredients. Pour into crust. Bake exactly 20 minutes in a pre-heated oven at 375 degrees F. Remove from the oven and spoon topping carefully over this.

For Topping: the vanilla is added to sour cream before spooning on pie. Glaze in oven at 475 degrees F for 5 minutes more; watch carefully. Chill before serving.
