Crock Pot Chicken Avocado Soup

The avocado gave my homemade chicken soup a delicious creamy taste.

Ingredients:

  • 1 avocado
  • 2 chicken thighs
  • 1 zucchini squash, sliced
  • 1 yellow Squash, sliced
  • 1 Potato, diced with skin on
  • 1 small package noodles
  • 1/2 tsp. salt
  • pepper to taste
  • crackers if desired

Directions:

Place chicken, zucchini, squash, and potato in a crock pot. Cover with water and add salt and pepper to taste. After an hour or so in crock pot remove chicken and shred it. Return chicken to crock pot and add noodles. After the noodles are cooked prepare your bowls. Cut avocado in half, remove pit, then cut each half in half and add to bowls. Dice into bite size cubes, pour soup on top, add crackers, and enjoy! After eating the soup I grew the avocado pit!
