Simple Vegetable Fajitas

Ingredients:
  • Tortillas.
  • Cheese.
  • Sour Cream (optional)
  • Gaucamole (optional)
  • Green, Red, Yellow and/or Orange Bell Peppers thinly sliced.
  • Onions thinly sliced.
  • 1/2 to 3/4 cup Salsa.
  • 1 to 1 1/2 Tbsp Vegetable, corn, peanut or canola oil.
  • Can of Refried Beans.

Heat a thin layer of oil in a pan on medium high heat.

Add Onions and Peppers, cook for 5 minutes.

Empty can of refried bean into small pot on Medium heat, cook until beans are heated completely.

Pour Salsa on top of vegetables in pan cook until vegetables are tender and soft.

Grate cheese.

In a separate pan or same pan wiped out, thinly coat bottom of pan with oil on Medium high heat.

Place tortilla in pan when tortilla starts to bubble turn over, should only take 30 seconds or so.

Instead of cooking tortillas in a pan you can also heat tortillas in the microwave, approximately 30 seconds.

It is best to serve fajitas as a buffet. Take a tortilla and fill with a little refried beans, a little vegetables, cheese and sour cream, salsa and/or gaucamole.
