Broccoli Rice Casserole

Ingredients

  • 2 pkgs. frozen, chopped broccoli
  • 2 cups cooked rice
  • 1 can cream style corn
  • 1/2 med. onion (chopped)
  • 6 Tbsp. saltine cracker crumbs
  • 1 egg (well beaten)
  • Dash of pepper
  • 2 Tbsp. margarine (melted)

Directions

Preheat oven to 350 degrees. Prepare broccoli per package directions; drain. In a large bowl, combine broccoli, rice, corn, onion, 4 Tbsp. of the cracker crumbs, egg, and pepper; mix well. Spoon into a 1 1/2 qt. casserole. In a small bowl, combine margarine, and remaining 2 Tbsp. cracker crumbs; toss to mix.. Sprinkle over the casserole. Bake for 1 hour.

Broccoli Rice Casserole II

Ingredients

  • 2 packages. chopped broccoli, thawed and drained
  • 1 1/2 cup cooked minute rice
  • 1 can condensed cream of mushroom soup
  • 1 can french fried onions
  • 1 jar cheese whiz

Directions

Combine broccoli, rice, soup and 1/2 cup onions in 2 quart casserole dish. Cover with vented plastic wrap. Microwave on high 8-10 minutes or until hot. Microwave cheese spread according to label directions. Stir cheese spread into broccoli mixture; top with remaining onions. Microwave 2 minutes or until thoroughly heated.

Broccoli Rice Casserole III

Ingredients

  • 16 or 20 oz. frozen broccoli
  • 1 stick or margarine or butter, melted
  • 4 oz. can of mushrooms, drained
  • 1 can cream of chicken soup
  • 1 soup can of milk
  • 1 soup can of Minute Rice
  • Velveeta cheese cubes to taste

Directions

Mix all together, put in a casserole dish and bake for 30 minutes at 350 degrees F.

Broccoli and Rice Casserole IV

We make a similar version to this, cooking our broccoli first, draining, adding soup and milk, uncooked rice and mushrooms and baking. Someone else posted a similar version to this one before but I don't think mushrooms were added to theirs.

Broccoli and Rice Casserole V

Ingredients

  • 1/2 cup diced onions
  • 1/2 cup celery
  • 4 tsp. butter
  • 2 cans cream of mushroom soup
  • 1 can cream of chicken soup
  • 2 - 10 ounce boxes frozen broccoli
  • 2 cups rice
  • 1 tsp. Worcestershire sauce
  • American cheese

Directions

Cook onions and celery. Cook broccoli and rice. Add all ingredients in a casserole bowl and bake for 30 minutes at 350 degrees F. It can be made before and refrigerated but then heat for 45-60 minutes.
