Garden Meatloaf

This meatloaf is absolutely delicious! The great thing about it is that it is full of goodies from the garden. Don't forget to double the recipe if you want sandwiches for leftovers!

Ingredients:

  • 3 cups grated or shredded zucchini
  • 1 1/2 lbs ground beef
  • 1 small onion, chopped
  • 2 tomatoes chopped
  • 1 large egg
  • 1 Tbsp. Worcestershire sauce
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1 cup bread crumbs
  • 1 Tbsp. milk
  • Chili Sauce or Ketchup for topping

Directions:

Mix all ingredients except topping. Shape into a loaf, brush with chili sauce and bake in a 325 degree F. degree oven for 1 hour to 1 1/4 hours OR shape as above and put in a greased crock pot and cook on low for 6 hours or high for 4 hours. Let sit 15 minutes before cutting.

You can also substitute or add shredded carrots, peppers, etc. This freezes well. I like to serve it with mashed potatoes and green beans from the garden.

Do you think summer squash would work for this recipe? I am trying to think of ways to use it.
