1 gallon (16 cups) sliced green tomatoes - sliced as thick as you want
1/4 cup salt
3 cups apple cider vinegar
1 cup water
4 cups sugar
1 Tbsp. pickling spices
1/2 tsp. cinnamon
1 Tbsp. celery seed
1 Tbsp. mustard seed
Directions
Slice tomatoes and pack tightly in hot, clean jars. Mix remaining ingredients in a separate pot and bring to a boil. Pour vinegar mixture into hot jars packed with tomatoes, filling jars. Put your lids and bands on tightly and water bath for 10 minutes. These are ready to eat in about a week. They are super crunchy, super good and super easy!!
I have been looking all over the internet for a recipe like this. I remember watching my grandmother "pack" her jars and it is so much easier. i just gathered all of my tiny leftover green tomatoes before tonight's frost so I am headed to the store for some lids. Thanks so much Jessica!!

Sounds so good but too late for this year. I let all my green tomatoes freeze on the vine. I will try next year.
