Heavenly Hash

Ingredients

  • 1 1/2 cups cold cooked rice
  • 1 1/2 cups diced marshmallows
  • 1/2 cup drained crushed pineapple
  • 1/4 cup nuts
  • 2 Tbsp. lemon juice
  • 1/2 cup confectionery sugar
  • 2/3 cup undiluted evaporated milk

Directions

Mix rice, marshmallows, pineapple, cherries and nuts in a bowl. Chill milk in refrigerator tray until soft crystals form around edges (15 - 20 minutes). Whip until stiff. Add lemon juice and whip stiff. Beat in sugar. Fold cream into rice mixture. Chill and serve.

Baked Tuna and Noodles

Ingredients

  • 1 cup bread crumbs
  • 1 cup warm milk
  • 1 can cream of mushroom soup
  • 3 beaten eggs
  • 1 package egg noodles, cooked in boiling, salted water
  • 2 1/2 Tbsp. melted butter or margarine
  • 1/2 cup grated cheese
  • 1 can tuna
  • 1/2 cup milk

Directions

Soak the bread crumbs in the milk. Dilute the soup with the above mixture, blend with the beaten eggs. Combine all ingredients and pour into a greased casserole. This is very good with crumbled potato chips over the top, or if you have a few more bread crumbs, sprinkle a few over the top before baking. Bake at 350 degrees F for 45 minutes.

Cider Gelatin Salad

Ingredients

  • 2 1/2 cups apple cider
  • 1 cup chopped apples
  • 1/4 tsp. salt
  • 2 envelopes unflavored gelatin
  • 1/2 cup finely chopped celery
  • 1 Tbsp. finely chopped parsley
  • 1/4 cup chopped nuts

Directions

Soak the gelatin in 1/2 cup of the cold cider. Heat remainder of cider to the boiling point and then add dissolved gelatin mixture. Chill until mixture begins to congeal and then add the remaining ingredients. Turn into a mold to chill.

Elegant Tuna Casserole

Ingredients

  • 3 Tbsp. butter or margarine
  • 3 Tbsp. flour
  • 3 cups milk
  • salt to taste
  • 2 cans tuna
  • 3 cups Ritz crackers, crushed

Directions

Melt butter or margarine. Stir in flour until smooth. Add milk. Cook over medium heat, stirring, until moderately thick. Remove from heat and stir in flavoring and salt to taste. Drain tuna if oily. In a greased casserole, make layers of tuna and crushed crackers, reserving a few cracker crumbs for top. Pour white sauce over layers and sprinkle crumbs on top. Bake at 350 degrees F for 30 minutes.

Mexican Chicken

Boil 1 chicken, remove meat from bones and dice. Saute one medium size onion (chopped) and one green pepper (chopped).

Mix together:

  • 2 cans cream of mushroom soup
  • 2 cans cream of chicken soup
  • 1 can Rotel tomatoes and chilies, diced
Add
  • 1 large bag Doritos chips (Nacho cheese) crushed, about 9 or 10 oz.
  • 1 cup grated cheddar cheese.
Mix everything together and put in 9x13 inch pan. Bake about 25 minutes at 350 degrees F.

Super Lasagna

Ingredients

  • 1 8 oz package lasagna noodles
  • 1 1/2 lbs ground beef
  • 1/2 t olive oil
  • 1/4 cup chopped onion
  • 1 clove of garlic, crushed
  • Two 6 oz cans tomato paste
  • Two 8-oz cans tomato sauce with mushrooms
  • 1 tsp. dried, crushed sweet basil
  • 1 tsp. dried parsley flakes
  • 1 tsp. salt
  • 1/2 tsp. oregano
  • 1 bay leaf
  • 1/4 tsp. black pepper
  • 1 1/2 cup water
  • 2 cups creamed cottage cheese
  • 1 egg, well beaten
  • Two 8-oz packages Mozzarella cheese

Directions

Cook noodles according to package directions; drain. Brown beef in a large skillet in the oil along with the sliced onion and fresh chopped garlic. Add tomato paste and sauce, basil, parsley, 1/2 tsp. salt, oregano, bay leaf, 1/8 tsp. black pepper and water; simmer for 1 hour. Meanwhile, combine cottage cheese, egg, rest of salt and pepper. Grate Mozzarella cheese if you don't buy the already grated cheese and arrange layers of noodles, cottage cheese, beef mixture and Mozzarella cheese in a 13x9 inch baking dish, ending with cheese on top. Bake at 350 degrees F for 30 minutes. Remove from oven;let stand for 15 minutes before serving. Serve with garlic bread or homemade hot rolls and a salad. 6-8 servings

Ham Balls

Ingredients

  • 3 lb. ham loaf mixture
  • 2 egg
  • 1 1/2 cups graham cracker crumbs

Sauce Ingredients

  • 1 1/2 cups brown sugar
  • 1/3 cup vinegar
  • 1 tsp. dry mustard

Directions

Heat oven to 350 degrees F. Mix meat, eggs and crumbs; form into balls. Arrange ham balls in pan. Mix sauce ingredients and pour over meat. Bake 1 hour.
