Ingredients
- 3/4 cup butter or margarine, softened
- 1/2 cup sugar
- 1/2 cup brown sugar
- 2 eggs
- 1 tsp. vanilla
- 1 3/4 cups flour
- 1 1/2 tsp. baking powder
- 2 cups shredded zucchini
- 1 cup coconut
- 3/4 cup chopped nuts, opt.
Directions
Cream butter and sugars. Add eggs, beating well. Add vanilla and zucchini. Stir, then add the rest of the ingredients. Spread in a greased 15x10 inch pan. Bake at 350 degrees F for 25-30 minutes or until toothpick near the center comes out clean. Frost cooled bars.
Frosting Ingredients
- 2 cups powdered sugar
- 1 tsp. cinnamon
- 2 Tbsp. butter, melted
- 1 tsp. vanilla
- 2-3 Tbsp. milk
Directions
Stir all together and spread over cooled bars. May garnish with chopped nuts.
