Ingredients
- 2 Tbsp. butter or margarine
- 1/2 cup chopped onion
- 1/4 cup chopped red bell pepper
- 1 garlic clove, pressed
- 1 can chicken broth (14oz)
- 1/8 tsp. pepper
- 2 tsp. dried basil leaves or 2 Tbsp. chopped fresh basil leaves
- 1 cup long-grain white rice, uncooked
- 1 cup frozen green beans, thawed
- 1/4 cup sliced almonds, toasted
Directions
In 2 qt. saucepan, melt butter over medium heat. Add onion, red pepper and garlic; cook and stir 3 minutes. Stir in broth, pepper and dried basil, if using. Bring to a boil. Stir in rice; return to a boil. Reduce heat; cover and simmer 15 minutes. stir in beans and fresh basil, if using. Cover; continue cooking for 3-5 minutes or until all liquid is absorbed and rice is tender. Stir in almonds just before serving. To toast almonds, spread almonds on baking sheet. Bake in preheated 350 degrees F oven for 7-10 minutes, stirring occasionally, until golden.
