Cinnamon Coffee Bars

I like this because it contains ingredients you are likely to have in the house. I have made this more times than I can count for a family of 7.

Ingredients:

  • 1/4 cup soft shortening, butter or margarine
  • 1 cup brown sugar
  • 1 egg
  • 1/2 cup hot strong coffee
  • 1-1/2 cups flour
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 1/2 tsp. cinnamon
  • 1/2 cup seedless raisins
  • 1/4 cup chopped nuts

Directions:

Cream together shortening, brown sugar and egg. Sift together and stir in the flour, baking powder, salt and cinnamon. Blend in the raisins and nuts. Bake at 350 degrees F for approx. 30 minutes.

Servings: 12
Time:10 Minutes Preparation Time
30 Minutes Cooking Time

This recipe came from my very first recipe book (Betty Crocker's New Dinner for Two Cookbook) which I received as a wedding present in 1964 and brings back many happy memories. With three adult children, it's still one of my family's very favorite cookie bars... To answer the pan question, I always use a 13x9 1/2" pan since the recipe makes 12 servings. This is definitely a "keeper" recipe - one you'll keep returning to again & again. (Brenda in Idaho)
