Pineapple Rice Casserole
- 1 1/2 cup long grain white rice
- 3 Tbsp. butter or margarine
- 1 fresh large pineapple, cored And spiraled
- 1 tsp. course salt
- 1/2 tsp. ground black pepper, optional
- 1 3/4 cups cold water
- 1/2 cup brown sugar
- 1/4 tsp. fresh ground nutmeg
- 1/4 cup pineapple juice
- 1 Tbsp. fresh shredded lemon peel
- 1 Tbsp. fresh shredded lime peel
In a large skillet melt butter or margarine over medium heat. Cook rice while stirring for 4-5 minutes. Add pineapple juice, salt, and water to the skillet and bring to a boil; reduce heat to a low-heat simmer cover and cook 15-20 minutes.
Stir in sugar, lemon zest, and nutmeg. Pour into a large baking dish and top with full slices of pineapples with core out.
Cover with foil and bake at 375 degrees F for about 25 minutes. Serve warm.
