Pancakes

This recipe has vinegar instead of baking soda and also has condensed milk in it because I accidentally opened a can. I turned the condensed milk into buttermilk with the vinegar, plus the vinegar makes it fluffy. I use a spoon of mayonnaise instead of an egg since I don't usually have eggs at the end of the month and I like to make batters safe so that children can lick the bowl. This recipe doesn't have vanilla in it but if you taste it, you can taste vanilla.

Ingredients:

  • 1 cup all-purpose flour
  • 1 tsp. baking powder (not soda)
  • 1 cup milk made by using two level spoonfuls of condensed milk and mixing enough water to make it one cup.
  • 1 Tbsp. or heaping tsp. of mayonnaise
  • 1/2 capful of Apple Cider Vinegar (about to two tsp.)
  • 1/8 cup vegetable oil

Directions:

Mix the ingredients in a bowl and let sit for about 5 minutes. Put on a hot skillet that is sprayed with non-stick spray. When bubbles are all over top then turn.

I put butter and use sugar free syrup on ours.

Sometimes I will take a little warm milk, splenda, and a touch of vanilla and mix it until the top forms a froth and use it as cool whip.

It is Baking Powder. I do not like to use baking soda in any of my recipes!
I love baking soda for cleaning purposes though!

Pancakes

These are yummy and good. You can also add blueberries to this recipe or chocolate chips. SO good!

Ingredients:

  • 1 1/4 cups flour
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1 1/4 cups buttermilk or sour milk
  • 1 egg, well beaten

Directions:

Mix all ingredients, beating until smooth. The following may be added for variety: 1/2 cup Wheaties, 1/2 cup blueberries, 1/4 cup chopped nuts or any fresh fruit or chocolate chips. Fry in frying pan until golden brown.

Servings: varies according to size
Prep Time: 15 Minutes
Cooking Time: 5 Minutes

  • 1 tsp. salt
  • 2 eggs, well beaten
  • 1 1/2 cups milk
  • 4 Tbsp. shortening, melted
  • 1 Tbsp. vanilla

Directions

Mix and sift dry ingredients, combine eggs and milk and add dry ingredients, beating until smooth. Add shortening. Preheat griddle to 300 degrees F for 5 minutes before frying.
