A St. Pat's Day Feast!

You don't have to be Irish to have fun on St. Patrick's Day. Why not surprise your family with a meal all made of green foods!

How about celery, grapes, limes, cucumbers, kiwi, broccoli, sherbet, lime jell-o, green salad, coleslaw? I am sure you can think of lots of others.

You can make almost any food green using green food coloring. Add a few drops to the water when cooking pasta and you will have green pasta. Add a few drops to pancake batter, or muffin batter.

Here are a couple recipes your children can help you make:

Green Spaghetti

  • 1/2 pound spaghetti, cooked
  • 3 packed cups basil leaves
  • 1 small clove garlic
  • 1/4 cup parmesan cheese
  • 1/4 cup olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Have your child take all the basil leaves off the stems. Put the leaves into the food processor. Smash and peel the garlic. Add it to the basil and blend. Add the cheese, oil, salt and pper and blend til it forms a thick paste, called pesto.

Add the pesto to a bowlful of hot spaghetti and mix with a fork.


Watergate Salad

Mix together:

  • 1 small box pistachio instant pudding
  • 1 small tub whipped topping
  • 1 can crushed pineapple, undrained
  • 1/2 cup chopped pecans
  • 1 cup mini marshmallows

My kids are half grown, but they still talk about Green Eggs breakfasts when they were little. If you add blue food coloring to your scrambled eggs before you cook them, you will have a lovely green, same with the orange juice!
I've even been known to color the butter, again adding blue to yellow makes GREEN!
Kids love this...but we never could quite figure out how to do the ham green...
