Apricot Pineapple Orange Salad


  • 6 oz. package orange gelatin
  • 2 cups boiling water
  • (scant) 2 Tbsp. Knox gelatin, dissolved in 4 Tbsp. cold water

  • 1 can chunk pineapple
  • 1 can unpeeled apricots
  • 1 can mandarin oranges
  • 1 cup mini marshmallows
  • 1 cup Cool Whip
  • Shredded cheddar cheese (optional)

Mix gelatin and hot water; add 2 cups juice from fruit; cool. Add Knox gelatin. Add fruit, cut up in small pieces (Do not cut up oranges).

Place in a 9x13 inch pan or casserole.

After firm, cover with the following dressing:

Salad Dressing


  • 1/2 cup sugar
  • 1 Tbsp. butter
  • 1 Tbsp. flour
  • 1 egg
  • 1/2 tsp. salt
  • 1 cup pineapple and apricot juice


Beat eggs. Add sugar, flour, salt, juice and butter. Cook, stirring constantly, until it thickens. Add 1 cup mini marshmallows, and beat until smooth; chill. Fold in 1 cup Cool Whip and spread on salad. Let stand several hours. You can sprinkle shredded cheddar cheese on top, if you like.
