Stuffed Cabbage Soup

If you love stuffed cabbage you will love this soup!

Ingredients

  • 1 Tbsp. olive oil
  • 1 pound ground sirloin (I used Italian sausages taken out of their casings)
  • 1-1 pound bag of cole slaw mix or 1 pound of shredded cabbage (I used a small cabbage head that was given to me)
  • 1 large onion, diced
  • 1 28 oz. can of diced tomatoes with juice
  • 1 26 oz. carton of beef stock
  • 1 1/2 cups of water
  • 1/4 cup brown sugar
  • 1 Tbsp. lemon juice
  • salt and pepper to taste
  • 1 cup of rice (I used minute rice)

Directions

Saute' meat in large, heavy pot with olive oil over medium heat until done. Add onion and cabbage. Mix well and cook uncovered for 6 minutes, stirring once halfway through. Add tomatoes with juice, stock, water, brown sugar, lemon juice, salt and pepper. Bring to a boil and add rice. Stir in well. Lower to a simmer and cover. Let cook for 45 minutes. Serve with bread or cornbread.
