Canola Oil Chocolate Cake
- 2 cups sugar
- 2/3 cups canola oil
- 2 eggs
- 2 tsp vanilla
- 2 2/3 cups flour
- 2 tsp baking powder
- 2/3 cup cocoa
- 1 tsp salt
- 2 tsp baking soda
Beat first 4 ingredients for 4 minutes. Sift dry ingredients and alternate add the dry ingredients and 2 cups boiling water to the oil mixture.
Bake in a 9 x 12 greased pan for 50 min at 325F.
