Easy to Make Diabetic Fudge Recipe

I'm looking for an easy, very easy to make diabetic peanut butter fudge recipe. I used to have one that was a no cook recipe but I can't find it. Does anyone have one?

Today's Recipes


Chicken Skillet

Ingredients

  • 2 lbs. boneless skinless chicken breast, cut into bite sized pieces
  • 2 8 oz. packages of frozen vegetables, any kind
  • 2 small cans of cream of soup, your choice: mushroom, chicken, celery.
  • 2 cans of water, fill soup cans up to top.
  • Salt and pepper to taste (optional)

Directions

In large deep skillet, add chicken breast, cook until no longer pink. Add soup, then water, and vegetables into skillet, and cook until hot. Add salt and pepper (optional).

Serve over rice or pasta, your choice.

Spinach and Tortellini Soup

Ingredients

Yield: 6 servings (about 1 cup each)

  • Vegetable cooking spray
  • 2 cups sliced carrots
  • 1/4 cup sliced green onions and tops
  • 2 cloves garlic, minced
  • 1 teaspoon dried basil leaves
  • 2 cans (15 ounces each) reduced-sodium chicken broth
  • 1-1/2 cups water
  • 1 package (9 ounces) fresh low-fat tomato and cheese tortellini
  • 3 cups torn spinach leaves
  • 2-3 teaspoons lemon juice
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon pepper

Directions

Spray bottom of large saucepan with cooking spray; heat over medium heat until hot. Saute carrots, green onions, garlic, and basil until onions are tender, about 5 minutes.

Add chicken broth and water to saucepan; heat to boiling. Reduce heat and simmer, covered, 10 minutes.

Heat broth mixture to boiling; stir in tortellini and spinach. Reduce heat and simmer, uncovered, until tortellini are al dente, about 5 minutes. Stir in lemon juice, nutmeg and pepper.

Nutritional Information Per Serving (about 1 cup each): Calories: 170, Fat: 3.5 g, Saturated Fat: 1.6 g, Cholesterol: 17.7 g, Sodium: 177, Protein: 8.6 g, Carbs: 26.9 g

Diabetic Exchanges: 1 Vegetable, 1-1/2 Bread, 1/2 Fat

O Is for Oatmeal Pancakes

Ingredients

  • 1/2 cup flour
  • 1/2 cup quick-cooking oats
  • 3/4 cup buttermilk
  • 1/4 cup milk
  • 1 Tbsp. sugar
  • 2 Tbsp. vegetable oil
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1 egg

Directions

Beat all ingredients togehter by hand until smooth. (For thinner pancakes, add 2-4 Tbsp. additional milk.)

Grease heated griddle, with cooking spray.

For each pancake, pour about 1/4 cup batter onto hot griddle.

Cook pancakes until they are puffed and dry around edges. Flip over and cook until golden.

Makes 10-12 pancakes.

N Is for Nutty Marshmallow Bars

Ingredients

  • 1 package (120z) semisweet chocolate chips
  • 1 cup peanut butter
  • 3 cup miniature marshmallows
  • 1/2 cup chopped nuts

Directions

Microwave chocolate and peanut butter in 2 quart bowl on medium heat 2-3 minutes until melted, stirring often. Fold in marshmallows and nuts, stir well. Pour into buttered 8x8x2 pan. Chill until firm. Cut into squares.

Salad Nicoise

Yield: 4 servings

Ingredients

  • 8 ounces small new potatoes, halved
  • 2-1/2 cups cut fresh green beans
  • 1/2 cup light olive oil vinaigrette salad dressing
  • 8 cups torn romaine, Boston, or Bibb lettuce
  • 4 slices red onion, separated into rings
  • 12-ounce can albacore tuna in water, drained
  • 4 hard-boiled eggs, peeled and quartered
  • 16 cherry or grape tomatoes
  • 1/4 cup sliced black olives

Directions

Place the potatoes in a 2-quart pot and cover with water. Boil for about 12 minutes, until tender.

Remove the potatoes with a slotted spoon, rinse with cool water, and set aside.

Add the green beans to the pot and boil for about 3 minutes, until crisp-tender. Rinse the beans with cool water and drain well. (You can cook the potatoes and beans the day before and refrigerate until ready to assemble the salads.)

When ready to assemble the salads, slice the potatoes 1/4-inch thick and place in a bowl with green beans. Add 1/4 cup of the salad dressing and toss to mix. Set aside.

Arrange a quarter of the lettuce over the bottom of each of four serving plates and top with a quarter of the onion rings.

Arrange the center of each salad and drizzle each salad with a tablespoon of the remaining dressing. Arrange a quarter of the potato mixture and 4 tomatoes around the outer edges of each plate and top with a sprinkling of olives. Serve immediately.

Banoffe Pie

Ingredients

  • Pie Crust
  • 1 can sweetened condensed milk.
  • 3 bananas
  • Cool whip

Directions

Got this from my wonderful sis-in-law Laura. Unbeatable!

Use any one of your favorite pie crusts, I prefer graham cracker crust.

Remove the label from the can of condensed milk. Do open the can. Take the can and stick it in a pot. Cover it with water. Put the pot on a stove and turn up the heat. When boiling, let the pot and can simmer gently for about two hours. Add more water to the pan, as necessary, when the level boils down too much.

When it's done, let it cool for a while and use a hot pad.

The resulting product should be colored tan or brown.

Once it has been boiled for 2 hrs. it becomes like toffee. Slice 3 bananas and put them in the pie crust open the can of "toffee" and pour on bananas. Top with cool whip and serve warm. So good, very rich. Love it!

Cheesecake - Tips and Recipes

Impossibly Easy Cheesecake

Ingredients:

  • 3/4 Cup Milk
  • 2 Tsp. Vanilla
  • 2 Eggs
  • 1 Cup Sugar
  • 1/2 Cup Bisquick
  • 2 Pkgs. (8 Oz Ea) Cream Cheese, Cut Up And Softened

Directions:

Heat oven to 350 degrees f. Grease 9 inch pie pan. Place milk, vanilla, eggs, sugar, and Bisquick in blender. Cover and blend for 15 seconds on high speed. Add cream cheese. Blend 2 minutes longer. Pour into pie pan. Bake 40-50 minutes or till knife inserted into center comes out clean. Let cool refrigerate to ready to serve.
