Braised Steaks

The V8 juice tenderizes the meat nicely; this is a favorite of the men in my family.

Ingredients:

  • 1 to 1 1/2 lb. of round steak, cut in 6 portions

  • 1 large onion, sliced
  • 1/4 tsp. thyme
  • salt
  • flour
  • 1 cup V8 juice
  • 1 cup beef broth
  • 1 1/2 cup julienned carrots
  • 2 Tbsp. chopped parsley

Directions:

Saute onion in 1 Tbsp. oil in skillet until golden. Remove to ovenproof dish and add thyme. Sprinkle salt and flour over steaks on both sides. Heat remaining oil in skillet and brown steaks on both sides. Transfer to dish with onions.

Pour V8 juice and broth over steaks. Cover and simmer in 350 degrees F oven for 1 hour. Turn steaks and sprinkle with carrots. Cook another 30 minutes. Arrange steaks on serving platter. Spoon sauce and carrots over steaks and sprinkle with parsley.

* I pour 1 cup water into skillet after removing steaks and scrape up the bits of meat to make a broth that has a rich meaty flavor.
