How can I stop the oil in marinated feta solidifying when placed in fridge?

You can't stop it from solidifying. The oil acts as a preservative, but it will not affect the taste of the cheese in any way. Just make sure to bring the cheese to room temperature before consuming. (I'm Greek, so we're used to this!)
