Old Fashioned Whoopie Pies

Someone wrote in quite a while ago and wanted the recipe for Whoopie Pies. I just found mine. So I am sending this on the off chance that this might be another good recipe for her and one she does not have And this one is delicious!

Ingredients

  • 1/2 cup baking cocoa
  • 1/2 cup hot water
  • 1/2 cup shortening
  • 1 1/2 cups sugar
  • 2 eggs
  • 1 tsp. vanilla extract
  • 2 2/3 cup all purpose flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 1/2 cup Buttermilk
Filling:
  • 3 Tbsp. flour
  • Dash salt
  • 1 cup milk
  • 3/4 cup shortening
  • 1 1/2 cups confectioner's sugar
  • 2 tsp. vanilla extract

Directions

Preheat oven to 350 degrees F. In a small bowl, combine cocoa and water, mix well. Cool for 5 minutes (in refrigerator).

In another mixing bowl, cream shortening and sugar. Add cocoa mixture, eggs and vanilla, mix well. Combine dry ingredients (I always just pile the dry stuff on top of each other) and mix well with the other ingredients. Saves time.

Drop by rounded teaspoons 2 inches apart. Flatten slightly with a spoon. Bake for 12 minutes or until firm to touch. When done, cool on wire racks.

In a saucepan, combine flour and salt. Gradually whisk in milk until smooth. Cook and stir over medium-high heat until thick (about 5-7 min). Remove from heat. Cover and refrigerator until completely cool.

Meanwhile, in a mixing bowl, cream shortening, sugar and vanilla. Add chilled milk mixture; beat for 7 minutes or until fluffy. Spread filling on half of the cookies,top with remaining cookies. Keep stored in refrigerator. Yield 2 dozen.
