Fruit Kebabs with Honey Yogurt Dipping Sauce

Here's a great after school snack for kids. It's amazing how much nutritious food kids will eat when you put it on a stick and let them dip it in sauce.

Ingredients

  • 1 cup plain yogurt
  • 2 Tbsp. honey, or to taste
  • 3 cups fresh fruit such as melon, pineapple, strawberries and grapes, cut into bite-size chunks

Directions

Combine yogurt and honey in a small bowl and stir until smooth. Thread fruit onto 4 bamboo skewers and serve with yogurt mixture.

PER SERVING: 104 Cal., 2g Fat (1g Sat.), 8mg Chol., 2g Fiber, 3g Pro., 20g Carb., 30mg Sod.

Safety tip. Snip the pointy end off the skewers before serving the kebobs to young kids. A nail clipper works well.

White Zucchini Cake

Cake:

Ingredients

  • 3 eggs
  • 1 cup oil
  • 3 tsp. vanilla
  • 2 cups white sugar
  • 2 cups unpeeled shredded zucchini
  • 2 1/2 cups flour
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 2 tsp. baking powder
  • 1 cup raisins, cooked until plump, reserving water
  • 1 cup cranberries, quartered
  • 3/4 cup walnuts, cut in large pieces

Directions

Combine eggs, oil, vanilla, sugar and zucchini. Then add flour, soda, salt and baking powder. Beat well. Stir in raisins and water, cranberries and nuts. Mix until raisin water is well blended. Pour into greased and floured 9x13 inch pan and bake at 350 degrees F for 45 minutes. Frost with Cream Cheese Frosting.

Cream Cheese Frosting:

Ingredients

  • 1 package cream cheese (8 oz.)
  • 1/2 cup margarine
  • 2 cups powdered sugar

Directions

Cream cheese and margarine. Work in powdered sugar, beating until light and fluffy. Spread over cake.

Sweet Macaroni Salad

Ingredients

  • 1 package elbow macaroni
  • 4 medium carrots, shredded
  • 1 large green pepper, chopped
  • 1 medium red onion, chopped
  • 2 cups mayonnaise
  • 1 can sweetened condensed milk
  • 1 cup sugar
  • 1 cup cider vinegar
  • 1 tsp. salt
  • 1/2 tsp. pepper

Directions

Cook macaroni according to package directions; drain and rinse in cold water. In a large serving bowl, combine the macaroni, carrots, green pepper and onion. In a small bowl, whisk the mayonnaise, milk, sugar, vinegar, salt & pepper until smooth. Pour over macaroni mixture and toss to coat. Cover and refrigerate overnight.

KFC Honey BBQ Strips

These are awesome, my family loves them.

Chicken Strips:

Ingredients

  • 2 lb. boneless skinless chicken strips
  • 2 3/4 cups flour
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1 cup buttermilk
  • vegetable oil

Directions

Mix flour, salt and pepper in bowl and set aside. Place buttermilk in separate bowl. Heat oil for frying and dip chicken strips in flour then buttermilk, then flour again. Place in hot oil. Fry chicken strips until lightly golden brown. Remove strips and drain.

BBQ Sauce:

Ingredients

  • 1 cup Hickory Smoke BBQ sauce
  • 1/4 cup water
  • 2 Tbsp. honey
  • 1 Tbsp. ketchup
  • 1 tsp. liquid smoke

Directions

Place all ingredients in small saucepan, mix thoroughly and simmer on low heat stirring frequently for 20 minutes. After cooking, let sauce cool slightly. Dip chicken breast strip in sauce one at a time and place in a preheated oven at 350 degrees F for 20 minutes.

Peanut Butter Kisses Cookies

Ingredients

  • 1 cup shortening
  • 1 cup peanut butter
  • 1 cup white sugar
  • 1 cup brown sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 2 1/2 cups flour
  • 1/2 tsp. salt
  • 3/4 tsp. baking soda
  • 1/2 tsp. baking powder
  • Chocolate kisses

Directions

Cream together shortening, peanut butter and sugars. Beat eggs and add to first mixture. Add vanilla, then flour, salt, baking soda and baking powder. Roll in 1 inch balls, then roll in sugar (don't flatten). Put on ungreased baking sheet. Bake at 375 degrees F for 10 minutes. Remove from oven and press a chocolate kiss into the middle of each cookie.

Pork Ribs

Put about 3 inches of water in your steamer OR use a large turkey roaster. You can balance a broiling rack on 4 wadded up balls of aluminum foil in lieu of a steamer. Add crushed garlic cloves and cut onion to water (you can substitute beer for water if you like). Bring to a rolling boil, cover and turn to medium - low. Cooking on low will minimize shrinkage. Steam your rack of pork ribs until tender. Babybacks take about 2 hours.

Remove ribs and cool enough to handle. Cut into individual ribs and baste liberally with your favorite sauce. Place in hot (400 degree F) oven. Convection ovens work well for this. Baste after 10 minutes. Cook another 10 minutes or until ribs are coated with cooked in sauce

Tip: you can put these on a hot BBQ instead of baking

Use the water in the steamer (pork broth by now, lol) to cook rice or potatoes or freeze in 1 quart baggies for later use as stock.

Georgia Peanut Salsa

Ingredients

  • 3 plum tomatoes, seeded and chopped
  • 1 jar picante sauce (8oz.)
  • 1 can white or shoepeg corn, drained
  • 1/3 cup Italian salad dressing
  • 1 medium green pepper, chopped
  • 1 medium sweet red pepper, chopped
  • 4 green onions, thinly sliced
  • 1/2 cup minced fresh cilantro
  • 2 garlic cloves, minced
  • 2 1/2 cup salted roasted peanuts
  • hot pepper sauce, opt.
  • Tortilla chips

Directions

In a large bowl, combine the first nine ingredients. Cover and refrigerate for at least 8 hours. Just before serving, stir in peanuts and pepper sauce, if desired. Serve with tortilla chips.

Caramel Candy Bars

Ingredients

  • 1 cup brown sugar
  • 3/4 cup butter Crisco
  • 2 eggs, beaten
  • 1 cup flour
  • mini marshmallows
  • 1/2 tsp. baking powder
  • 1 cup quick oatmeal
  • 1 tsp. vanilla
  • 1/2 tsp. salt
  • 1/2 cup nutmeats (opt.)

Directions

Combine all ingredients except the marshmallows. Spread 1/2 of mixture into a 9x13 inch pan. Cover all over with mini marshmallows. Add the remainder of the dough on top. Bake in a preheated 350 degree F oven for 20-25 minutes. Cool.

Frosting Ingredients

  • 15 caramel candies
  • 1/2 cup half and half
  • 1 Tbsp. butter
Put into saucepan. Heat until melted. Blend well. Spread on bars while bars are still warm.
