S'more Muffins

Ingredients

• 1 1/2 cups flour
• 3/4 cup graham cracker crumbs
• 1/4 cup brown sugar
• 1 tsp. baking soda
• 1/2 tsp. salt
• 1 egg
• 1 1/2 cups buttermilk
• 1/4 cup vegetable oil
• 3/4 cup chocolate chips
• 1 1/4 cups mini marshmallows

Directions

Mix first five ingredients. Combine egg, buttermilk and oil; mix well. Stir into dry ingredients just until moistened. Fold in chocolate chips and 1 cup marshmallows. Fill greased muffin cups 3/4 full. Sprinkle a few marshmallows over each muffin. Bake at 375 degrees F for 18-20 minutes or until toothpick comes out clean. Cool slightly; serve warm.
