Shrimp & Broccoli Fettuccine

Ingredients:
  • 1 lb uncooked fettuccine (or other pasta)
  • 1 cup uncooked broccoli (or other vegetables)
  • 4 garlic cloves, minced
  • 2 tbsp canola oil
  • 1 lb uncooked shrimp
  • 2 medium tomatoes, chopped
  • 1/2 tsp Italian seasoning
  • 1/4 tsp salt
  • Grated Parmesan cheese (optional)

Ingredients:

Cook pasta according to package directions. At the same time saute broccoli and garlic in oil for a couple minutes. Add shrimp, tomatoes, seasoning & salt to broccoli. Cook for a few minutes until shrimp turns pink. Drain pasta and add to frying pan. Mix. Sprinkle with parmesan cheese if desired.

Serves 8.
