Mexican Tortilla-Less Wraps

When we were on a low carb diet I discovered we could enjoy all the taste of tortillas without the carbs.

Ingredients:

  • 1 Iceberg "cabbage head" Lettuce
  • 2 large tomatoes
  • 1 large onion
  • 1 large bell pepper, cored and sliced
  • 1 lb. chicken breast cut into 1/2inch pieces
  • Mexican seasoning mix of your choice
  • oil for frying
  • low fat cream cheese (it sticks to the lettuce better than sour cream and has less fat)
  • preferred toppings: refried beans, avocado, salsa

Directions:

Before you start cooking, slice the onion and pepper and separate the lettuce into leaves. Don't chop the lettuce. Keep them as whole as you can as these will be the replacement tortillas.

Fry the chicken breast pieces with the oil and Mexican seasoning, as soon as it looks almost done put in the onion slices and keep frying until the vegetables are softened.

Now assemble your tortillas in the normal way but using the lettuce leaves as a substitute for the calorie and carb rich flour tortillas.

This is a healthy and tasty recipe and is also excellent for those with gluten intolerance and a great way to get some salad into the kids too! Its surprising but it is just as satisfying as the conventional style recipe.
