No Cook Mint Patties

Ingredients

  • 4 Tbsp. margarine, softened
  • 1/3 cup light corn syrup
  • 1 tsp. peppermint extract
  • 1/2 tsp. salt
  • 1 (1 lb.) box sifted powdered sugar
  • 1 drop red food coloring
  • 1 drop green food coloring

Directions

Blend margarine, corn syrup, peppermint extract and salt in a large mixing bowl. Add p. sugar and mix with spoon or hands till smooth. Divide mixture in 3 equal portions. Knead red coloring into 1 portion. Knead green coloring into another portion and leave the third portion white.

Shape into small round balls flatten with fork, place on wax paper. Let dry several hours, then store in airtight container.

Eggplant Haters Mind Changer

Ingredients

  • 1 larger or 2-3 small eggplant
  • 1 med-large onion
  • 1 med-large green bell pepper
  • 1-3 Tbsp. cooking oil
  • 1 can Manwich sloppy joe sauce

Directions

Slice onion and bell pepper into thin slices. Dice eggplant (peeled or unpeeled) into 1/2 inch cubes. On medium high heat, add 1 Tbsp. oil to large frying pan (or pot). Saute onion and pepper till it starts to get soft. Add 1 more T.. oil, then add eggplant (add a third Tbsp. oil if needed). When eggplant starts to soften, pour Manwich over ingredients. Add 1/2 Manwich can of water. Cover; reduce heat and simmer 1-2 hours before serving.

(Excellent as a pasta sauce. Best served the next day.)

Easy Oyster Casserole

Ingredients

  • 1 can Oysters, drain
  • Crackers
  • Butter
  • Milk
  • Black Pepper

Directions

Butter a casserole dish. Crumble enough crackers to cover the bottom of the dish, about 1/4 inch deep. Add 1 can drained oysters. Cover with another layer of cracker crumbs. Dot generously with butter. Add enough milk to cover ingredients well. Sprinkle black pepper over top. Bake at 375 degrees for 30 minutes or till hot and bubbly.

My parents love this dish!

Chocolate Overdose

Ingredients

  • 1 box your favorite brownie mix
  • 1 (1/2 gallon) Haagen-Dazs chocolate-chocolate chip ice cream
  • 1 bottle Kahlua liqueur*
  • 1 cup finely chopped nuts (walnuts, almonds, pecans, etc.)

Directions

Bake brownies according to the package directions. Cool. Slice brownies to desired size and place each on separate dessert plates. Top each brownie with 1 scoop ice cream. Pour 1-2 ounces Kahlua over ice cream. Sprinkle with chopped nuts. Serves: 1-6.

*Hot fudge or chocolate syrup may be substituted for Kahlua.

Special note: New Chocolate flavor of Cool Whip in local markets, now!

Sausage Cake

Ingredients

  • 1 lb. pork sausage
  • 1 (1 lb.) box dark brown sugar
  • 1 cup raisins
  • 2-3 tsp. cinnamon
  • 1 cup black walnuts, chopped
  • 1 tsp. baking soda
  • 1 cup black coffee
  • 2 1/4 cup all purpose flour

Directions

Remove sausage from refrigerator about 20 minutes before using. In a large mixing bowl, mix b. sugar, cinnamon, raisins, and black walnuts. Dissolve baking soda in the cup of coffee and pour in b. sugar mixture; stir. Stir in flour and blend well. Can be baked in two 9 inch. cake pans or 1 Bundt pan. Bake in 350 degree oven for about 50 minutes. Ice with caramel, nut, or chocolate icing.

Pepsi Cake

Ingredients

  • 1 box yellow cake mix
  • 1 box instant vanilla pudding
  • 1/2 cup water
  • 4 eggs
  • 1/2 cup Pepsi
  • 1/2 cup cooking oil
  • 1/2 cup chopped pecans

Directions

Beat 1st 6 ingredients for 2 minutes. Put pecans in bottom of greased Bundt pan. Pour cake batter in next. Bake at 325 degrees for 60 minutes. Fix icing while cake is in oven, as it will be poured over the hot cake while still in the pan.

Icing:

Ingredients
  • 1 stick butter
  • 1 cup sugar
  • 1/2 cup Pepsi

Directions

Boil icing ingredients for 3 minutes; pour over cake as soon as it comes out of oven. Leave cake in Bundt pan until completely cool, then turn out onto a plate or cake stand.

Shoestring Potato Cookies

Ingredients

  • 1 (12 oz.) pkg. butterscotch morsels
  • 4 Tbsp. peanut butter
  • 1/2 cup coconut
  • 1/2 cup chopped walnuts
  • 1 (4 oz.) can shoestring potatoes

Directions

Melt butterscotch morsels and peanut butter in a double boiler. Pour mixture over coconut, walnuts and shoestring potatoes. Shape into cookies and place on wax paper lined cookie sheet. Place in refrigerator till set.

Cabbage Soup

I sent this recipe as a reply but so many requested it I thought I had better add it here. It is "Cabbage Soup".

Directions

  • 4 cans chicken broth ( I usually have my own broth) in a good size pot.

Add:

  • 8 cloves garlic minced
  • 2 onions chopped medium
  • 1 Small to medium Cabbage chopped medium
  • 2 carrots
  • 2 celery
  • 2 zucchini, ( everything kind of bite size)
  • 2 bay leaves
  • 1/2 tsp. cayenne pepper, salt and white pepper.

Bring to a boil and simmer 45 minutes

Add: two tomatoes (or lg. can diced)

Cook another 15 min and then I put either sliced pork steak or sliced chicken breast (again bite sized)

And simmer another 20 minutes. It is so good. I make it so often that I add any other veggies like sliced broccoli stalks, bag of spinach, container of sliced mushrooms (just any leftovers you have) along right at the beginning. Don't taste after adding the raw meat, until the meat gets cooked. This was a lose weight soup and I'd eat it any time of day. My husband likes me to add cannel beans (drained ) and elbow mac cooked then it's like a minestroni. Hope you like it!

Devilish Pecan Pie

Ingredients

  • 1 1/2 cup chopped pecans
  • 1 (6 oz.) pkg. chocolate chips
  • 1 very deep 9 inch pie shell
  • 1/2 stick margarine, melted and cooled
  • 3 large eggs
  • 1 cup honey
  • 1/2 tsp. vanilla

Directions

Preheat oven to 325 degrees F. In an med. size mixing bowl, mix together pecans and choc. chips; pour into bottom of pie shell. In same mixing bowl, beat eggs well; add honey and vanilla. Mix well. Blend in margarine. Pour into pie shell over the nuts and choc. chips. Bake at 325 degrees for 50-60 minutes or till knife tests clean in center of pie. Cool and serve at room temperature.

Fruit Cobbler

Ingredients

  • 1 stick of oleo
  • 1 cup milk
  • 1 cup flour
  • 1 can fruit (any)
  • 1 cup sugar

Directions

In casserole dish melt oleo, mix flour, sugar and milk together. Pour over oleo easily, add fruit to the middle of mixture. DO NOT STIR! Bake at 350º F for 30 min or until brown.
