Coffee Slushie

Ingredients

  • 1 Tbsp. instant coffee
  • 1 cup ice cubes
  • 1/2 cup milk
  • 2 Tbsp. sugar

Directions

Place all ingredients in blender. Cover and blend on high speed until ice is crushed.

Pour into glasses and enjoy.

This is a real nice pick me up when I need a little more caffeine.

Easy Cheese Sticks

Ingredients

  • 1 pound jack, cheddar, swiss or mozzarella cheese, cut into 3x1/2 inch sticks (or you can use the cheese sticks already in the package in your dairy section)
  • vegetable oil
  • 1 cup bisquick
  • 1 tsp. paprika
  • 1/2 cup milk
  • 1 egg
  • marina sauce

Directions

Place cheese sticks on a tray and place in freezer for at least 1 hour.

Heat oil to 375 degrees F in large saucepan or deep fryer.

Mix bisquick, paprika, milk and egg together until smooth.

Dip cheese sticks into batter, 1 at a time into batter, covering cheese completely.

Fry 1-2 minutes, turning carefully, until golden. Drain on paper towels. Let stand 3 minutes before serving

Rhubarb Cream Pie

On 5/28/04 you had reader request for Rhubarb Pie receipe. This one is my favorite. Comes from the First Mennonite Church Cookbook.

Rhubarb Pie

  • 1 1/2 cups sugar
  • 1 tablespoon flour
  • 2 beaten eggs
  • 2 cups finely chopped rhubarb
  • 5 tablespoons of water

Put rhubarb into unbaked pie shell. Mix all other ingredients in a bowl and pour over rhubarb. Top with pieces of butter and cinnamon and bke in 350* oven for 1 hour.

I like to use the smallest, most tender rhubarb and chop if very fine. Enjoy!

Rhubarb Cream Pie

Ingredients

  • 1 1/2 cup sugar
  • 3 Tbsp. flour
  • 1/2 tsp. nutmeg
  • 1 Tbsp. butter
  • 2 eggs (beaten)
  • 3 cup rhubarb
  • 1 unbaked pie crust

Directions

Mix altogether. Pour into pie crust and bake 10 minutes at 450 degrees F, then 30 minutes at 350 degrees F. Can put meringue on top, if desired.

Cappuccino Mousse

Ingredients

  • 1 cup milk
  • 3/4 cup strong coffee
  • 1 pkg (4 serving size) vanilla instant pudding and pie filling
  • 2 Tbsp. sugar
  • 2 cups heavy whipping cream
  • 1/4 cup sugar

Directions

In large bowl, beat milk, coffee, pudding mix (dry), and 2 Tbsp. sugar with wire whisk about 2 minutes or till slightly thickened.

In chilled large bowl, beat whipping cream and 1/4 cup sugar with mixer on high speed till stiff. Gently stir whipped cream into coffee mixture. Refrigerate about 15 minutes or till set, enjoy.

Cheesecake - Tips and Recipes

Impossibly Easy Cheesecake

Ingredients:

  • 3/4 Cup Milk
  • 2 Tsp. Vanilla
  • 2 Eggs
  • 1 Cup Sugar
  • 1/2 Cup Bisquick
  • 2 Pkgs. (8 Oz Ea) Cream Cheese, Cut Up And Softened

Directions:

Heat oven to 350 degrees f. Grease 9 inch pie pan. Place milk, vanilla, eggs, sugar, and Bisquick in blender. Cover and blend for 15 seconds on high speed. Add cream cheese. Blend 2 minutes longer. Pour into pie pan. Bake 40-50 minutes or till knife inserted into center comes out clean. Let cool refrigerate to ready to serve.

The best-ever cheesecake!

I got this recipe from my mom's old Betty Crocker cookbook and everyone who ever tasted it says it is by far the best cheesecake they ever had! I tried sooooo many cheesecake recipes and this is the best and also the easiest to make, so here it is. Enjoy!

Ingredients and Directions

Cream well to soften:

  • 3 - 8oz. Packages cream cheese (warm to room temperature)

Beat until stiff:

  • 4 egg whites

Blend in:

  • 1 cup sugar

Combine with cheese. Add:

  • 1 teaspoon vanilla

Preheat oven to 350 degrees F. Butter an 8 inch springform pan and dust with graham cracker crumbs. Pour mixture into pan and bake for 25 minutes.

Mix together and spread over top:

  • 2 cups sour cream (warm to room temperature)
  • 2 tablespoons sugar
  • 1/2 teaspoon vanilla

Bake an additional 5 minutes at preheated 475 degrees F (very hot oven!).

Refrigerate overnight.

Pineapple Salsa

Ingredients

  • 1/2 cup chopped green pepper
  • 1/2 cup chopped yellow pepper
  • 1/2 cup chopped red pepper
  • 1 small can mandarin oranges
  • 1 small can crushed pineapple
  • 1/4 cup lime juice
  • 2 Tbsp. honey
  • 1/2 cup chopped green onion (scallions)

Directions

Into a bowl mix a half all ingredients.

Let marinade for at least one hour. Excellent over practically any of your favorite meats - salmon, chicken, pork loin, steak - use your imagination!

Nice Beef and Tomato Recipe

1 flat piece of beef roast
1 pkg onion soup mix
1 can of tomato soup

Cut meat into chunks or strips.

Put on top of tomato and onion soup mixed together. You may add more liquid if desired.

Roast in slow oven for 2 hours or so and you have a nice beef dish with tomato gravy (a little Tobasco sauce on top is good, if that is to your liking.)

Banana Bars

Banana Bars and Frosting

Ingredients:

  • 3 cups flour
  • 2 cups sugar
  • 1 1/2 cups oil
  • 1 tsp. salt
  • 1 tsp. soda
  • 3 eggs (beaten)
  • 1/2 cup nutmeats
  • 1 tsp. vanilla
  • 1 tsp. cinnamon
  • 2 mashed bananas
  • 1 can crushed pineapple (use juice)

Directions:

Mix all together the ingredients. Do not use mixer or beater. Stir very well. Will fit one 11x18 or 9x12 inch pan. Bake at 350 degrees for 25-30 minutes.

Cream Cheese Filling:

  • 3 oz. cream cheese (softened)
  • 6 T, butter or margarine
  • 3 cups powdered sugar
  • 1 tsp. vanilla
  • 1 tsp. milk or as needed for spreading consistency

Directions:

Mix ingredients and spread on cooled bars.

Banana Bars

Ingredients

  • 1/2 cup margarine (softened)
  • 1 1/2 cups sugar
  • 3/4 cup sour milk
  • 2 cups flour
  • 1 tsp. soda
  • 2 eggs
  • 1 tsp. vanilla
  • 1/2 tsp. salt
  • 3 bananas (mashed)

Directions

Cream margarine and sugar. Add remaining ingredients, except bananas and mix well. Add bananas and stir to blend. Bake in 9x13 inch pan for 20 minutes at 350 degrees F.
