Sweet Potato and Peanut Soup
Creamy and hearty!
- 1 medium sweet potato (1.5 lbs.)
- 1 garlic clove
- 1 tsp. freshly grated ginger (optional)
- 1 Tbsp. natural peanut butter
- 3-4 cups vegetable broth
- 1/2 small onion, minced
- pinch of cloves
- 1 small carrot, chopped
- salt and pepper to taste
I put all of this in a crock pot on high for 3 hours, then blended it with a hand blender. This can also be done on the stove top.
