Peaches, peaches, peaches! We have tons of peaches this year. I have frozen, canned, made cobblers, served fresh, any other ideas? I hate to see all of them go to waste. I have had a couple of people take me up on picking some, but isn't it ironic you can't hardly even give them away!

Any ideas would be appreciated.

I bought a box of peaches that look great but are dry and mealy inside. They have some juice but not a lot. I fear the whole box may be like this. Any suggestions as to what I can make out of these?

i made peach salsa, using all the same ingredients from my favorite tomato salsa even adding the tomatoes a favorite in our house.

Easy Peach Cobbler
********************************
1/2 cup butter
1 cup all-purpose flour
1 cup sugar
1 tbsp. baking powder
1 cup milk
1 can peach slices or pineapple
ground cinnamon/sugar

Start oven at 350º. Melt butter in a 13" X 9" baking
dish (while you are getting the other ingredients
ready). Combine flour, sugar, baking powder; add
milk, stirring just until dry ingredients are
moistened. Pour batter over melted butter (do not
stir). Pour peaches or whatever fruit over batter (do
not stir). Sprinkle with cinnamon/sugar, if desired.
Bake at 350° for 1hr or until golden brown. Serve
cobbler warm or cool.

I made peach nectar (peach juice) this year. I cheated a little by leaving the skins on, but no one knew. I washed the peaches and pitted them, then threw them into my Vita-Mix blender with some water, lemon juice, and sugar. I pureed them and poured into a large pan to cook until the foam cooked out. I poured the hot nectar into jars and put into a hot water bath to seal. If you make the juice a little too thick, you can add some water later, after opened. This is so good. Later it can be used as a drink, to marinade meats, added to jello, as a basis for fresh fruit sauce for pancakes/waffles, over ice cream, or to top slices of cake.

Yummy, homemade peach ice cream ... boy that reminds me of my Grandma. Can some peach salsa too!

Peach Salsa [ canned ]

6 cups prepared peaches, about 12 medium or 3 pound (1.4 kg)
1 &frac; cups chopped red onion
4 jalapeño peppers
1 red pepper, chopped
&frac; cup loosely packed finely chopped fresh cilantro or coriander
&frac; cup white vinegar
2 tablespoon liquid honey
1 clove garlic, finely chopped
1 &frac; teaspoon ground cumin
&frac; teaspoon cayenne pepper

Fill boiling water canner with water. Place 8 clean half-pint (250 mL) mason jars in canner over high heat. Blanch, peel, pit and chop peaches. Measure 6 cups (1.5 L). Place Snap Lids in boiling water; boil 5 minutes to soften sealing compound. Combine peaches, onion, peppers, cilantro, vinegar, honey, garlic, cumin and cayenne pepper in a large stainless steel or enamel saucepan. Bring to a boil, stirring constantly to prevent scorching. Boil gently, stirring frequently, 5 minutes.

Ladle salsa into a hot jar to within &frac; inch (0.5 cm) of top rim (head space). Remove air bubbles by sliding a rubber spatula between glass and food; readjust head space to &frac; inch (0.5 cm). Wipe jar rim removing any stickiness. Center Snap Lid on jar; apply screw band just until fingertip tight. Place jar in canner. Repeat for remaining salsa.

Cover canner; return water to a boil; process 10 minutes at altitudes up to 1,000 ft (305 m). Remove jars. Cool 24 hours. Check jar seals. Sealed lids curve downward. Remove screw bands; store separately. Wipe jars, label and store jars in a cool, dark place.

Have you ever thought of making your own fruit leather? This would make great gifts & use up alot of your fruits, too. Wish I lived close to you. I'd love to take a couple bushels off your hands for you!!

have you ever had pickled spiced peaches? peach salsa? you can substitute peaches for mangos in salsa. they make a great glaze for ham. just keep freezing and canning. in january you'll be glad you did (or your neighbors will be when you get sick of them and pass them on)

How about ice cream. Also freezing some pureed in ice cube form for fruit smoothies? Maybe there is a bread made with them, then freeze some. I like the idea of dried peaches too.

Are cobblers the same as dried peaches? If not, google "How to dry peaches" and the instructions will come up.
