Oatmeal Raisin Cookies Without Nuts

Does anyone have an easy recipe for oatmeal raisin cookies WITHOUT nuts? Nuts are expensive and I rarely have them on hand. I want a recipe I can just whip up in a hurry. Thanks!

5 Lb. Fudge

Ingredients

  • 4 1/2 cups sugar
  • 1 small can evaporated milk
  • 1 package chocolate chips
  • 2 sticks (1/2 lb.) butter
  • 1 jar marshmallow creme
  • 2 tsp. vanilla
  • nuts

Directions

Combine sugar and evaporated milk together in heavy pan and boil for 8 minutes. Pour the above mixture over the chips, butter, marshmallow creme, vanilla and nuts and stir. Pour into 9x13 inch buttered pan.

Hearty Oatmeal Muffins

Ingredients

Batter

  • 1 1/2 cups flour
  • 1 cup rolled oats
  • 1/2 cup packed brown sugar
  • 1 Tbsp. baking powder
  • 1 tsp. cinnamon
  • 1/4 tsp. salt
  • 1 egg
  • 1 cup milk
  • 1/4 cup vegetable oil
Topping
  • 2 Tbsp. rolled oats
  • 1 Tbsp. sugar
  • 1/4 tsp. ground cinnamon

Directions

Preheat oven to 400 degrees F. Line 12 medium muffin cups with paper liners, or lightly grease bottoms only. For batter, combine flour, oats, brown sugar, baking powder, cinnamon and salt in large bowl. In small bowl, whisk egg, milk and oil. Add to dry ingredients; stir until just moistened. (Batter will be lumpy.) Spoon batter into prepared muffin cups, filling each cup 3/4 full. For topping, combine oats, sugar and cinnamon in small bowl; sprinkle evenly over batter in muffin cups. Bake 18-20 minutes or until golden brown. Let muffins stand a few minutes before removing from pan.

Egg and Sausage Bake

Ingredients

  • 1 can crescent rolls
  • 1/2 lb. smokey cocktail links (Like Little Smokies)
  • 1 package Swiss cheese
  • 4 eggs, slightly beaten
  • 3/4 cup milk
  • 2 Tbsp. green pepper, chopped
  • salt and pepper
  • 1/4 tsp. oregano

Directions

Use an ungreased 8 inch square baking dish and put crescent rolls first in bottom of pan (may have to overlap). Place sausages on crust, place cheese over sausage. Mix remaining ingredients and pour over all. Bake 20-25 minutes at 425 degrees F. Note: Can make and refrigerate overnight. Makes an excellent brunch dish.

Broccoli Baked Potatoes

Ingredients

  • 6 medium Idaho potatoes
  • 3 stalks broccoli
  • 1/4 cup skim milk
  • 1 cup shredded low fat Cheddar cheese
  • 1/8 tsp pepper

Directions

Scrub potatoes. Make shallow slits around the middle as if you were cutting the potatoes in half lengthwise. Bake until done, 30 to 60 minutes, depending on size. Peel broccoli stems. Steam whole stalks just until tender and chop finely. Carefully slice the potatoes in half and scoop the insides into a bowl with the broccoli. Add the milk, 3/4 cup cheese and pepper. Mash together until the mixture is pale green with dark green flecks. Heap into the potato jackets and sprinkle with remaining cheese. Return in oven to heat through (about 15 minutes). Oven: 350 degrees F. Time: 30 to 60 minutes; 15 minutes to melt cheese or to reheat.

$10 Dinners: Spaghetti and Meatballs

10-dinner.jpgThese meals are intended to be a relatively simple and healthy weeknight meal for a family of four. We assume that these dinners are being made in a kitchen stocked with regular kitchen staples. We will not include prices of oil, sugar, flour, spices, etc. unless you need a 1/4 cup or more. Regional food prices may vary and can be reduced by smart shopping techniques.

(or use a beef/turkey mixture)

Staples

  • Cooking Oil
  • 1 Egg
  • Bay Leaf
  • Italian Seasoning

Directions

Chop onion and mince or press 4-5 garlic cloves, more if you would like to make garlic toasts with the loaf of bread. Set aside 1/2 cup of onion and 2 cloves of garlic for meatballs. Take a Dutch Oven or large frying pan and cook the rest of the onion and garlic in 1 Tbsp. of oil until softened. Add the tomatoes, including juices to the pan. Add 1 Tbsp. of Italian Seasoning, 1 bay leaf and salt and pepper to taste. Cook on medium high, stirring regularly until the tomato sauce comes to a boil then reduce heat and simmer covered for at least 30 minutes, stirring occasionally. This can cook longer and will be even better as it cooks. As the tomatoes cook down, you will want to crush the whole tomatoes to make a smooth flavorful sauce.

At least 30 minutes before you would like to eat, mix ground beef with 1 egg, 1 cup of breadcrumbs (1 slice of the bread, lightly toasted and crumbled or chopped), salt, pepper and the reserved onion and garlic. I mix it with my hands, like making meatloaf. Make small balls, under 1 inch, and place on a cookie sheet. Bake at 375 degrees F for 10 minutes, turn them over and bake for another 10 minutes until no pink remains. Or you could brown them in cooking oil, if you prefer. Add cooked meatballs to spaghetti sauce and cook for about 10 more minutes. Serve over cooked spaghetti, with garlic toasts and apple slices.

Tips:

  • Homemade bread or homegrown tomatoes would be less expensive.
  • If you need a quicker dinner, just brown the ground beef with the onions and garlic.
  • You can substitute a jar of spaghetti sauce for about the same price. Just add it instead of the tomatoes and spices.
  • You could substitute a bagged salad for the apples for about the same price.
  • If you would like a vegetarian meal instead, substitute the ground beef for 1 pound of button or crimini mushrooms. Brown them whole to mimic the shape of the meatballs or slice them and cook with the onions and garlic.

Blueberry Surprise Cake

Ingredients

  • 2 cups mini marshmallows
  • 2 cups fresh blueberries
  • 1 package mixed berry flavored gelatin (3oz.)
  • 2 1/2 cups flour
  • 1 cup sugar
  • 1/2 cup shortening
  • 3 tsp. baking powder
  • 1/2 tsp. salt
  • 1 cup milk
  • 1 tsp. vanilla
  • 3 eggs

Directions

Grease 9x13 inch baking pan. Space marshmallows evenly across the bottom.combine blueberries and their juice with the dry gelatin in a separate bowl; set aside. Combine remaining ingredients, beat well. Pour batter over marshmallows in pan and spoon berry gelatin mixture over top of batter. Bake in 350 degree F oven for 30 minutes, then reduce heat to 300 degrees F and continue baking 15 minutes. Marshmallows will rise to the top. Makes 12-15 servings. By Robin from Washington, IA

Presto Pasta Salad

Ingredients:

  • 1 pkg. fusilli
  • 1 medium size sweet red pepper, cut into strips
  • 1 cup fresh mushrooms, sliced
  • 1 cup broccoli flowerets
  • 1 bottle Caesar salad dressing

Directions:

Cook pasta according to package directions; drain. Rinse with cold water and drain again. Combine pasta and remaining ingredients; toss well. Serve immediately or chill, if desired.

Crockpot Chicken and Rice

Inside crockpot, spray with pam cooking spray, lightly. Put 3-4 boneless, skinless chicken breasts on the bottom of the crockpot. Put a dab of butter on each chicken piece. Then over the butter, sprinkle garlic salt on each. Then over the garlic salt, put a slice of cheddar cheese on top. Over cheese put in a can of cream of chicken soup. UNDILUTED.

Cook on high 5-6 hours. 30 minutes before serving, shred chicken in the crockpot. When ready to serve. Have rice cooked. Put your chicken over cooked rice. And also serve it with a green salad, and rolls.

This is my family's favorite.
