My mother made something like this almost every Saturday. She used sweetened bread (or roll)dough, lined up sliced apples on top, sprinkled with sugar and cinnamon. Left rise a while, and then baked same as bread. She used a 8x8 pan. She made her own bread sough, but you could use frozen. My sister uses frozen bread dough, and she puts sliced plums on top of hers.
