Recipe: Broccoli Casserole

Ingredients
- 1 can mushrooms
- 1 can sliced water chestnuts, drained
- 2 Tbsp. butter
- 1 env. dry onion soup mix
- 2 pkg. frozen broccoli, cooked, drained
- 1/4 cup bread crumbs
- 1/2 cup grated cheese
Directions
Saute' mushrooms and water chestnuts in butter and soup mix in skillet. Combine with broccoli in casserole. Top with bread crumbs and cheese. Bake at 325 degrees F for 20-25 minutes or until bubbly.

Recipe: Potluck Broccoli Casserole

Ingredients
- 2 pkg. frozen chopped broccoli
- 1 pkg. Uncle Ben's original recipe long grain and wild rice
- 1 can sliced water chestnuts, drained
- 1 can cream of mushroom soup
- 8 oz. jar Cheez Whiz
Directions
Cook broccoli according to package directions, drain and reserve juice. Place drained broccoli into large casserole dish. Cook rice according to package directions using reserved broccoli liquid as part of required liquid. Add rice to casserole. Add drained water chestnuts, cream of mushroom soup, and Cheez Whiz. Mix together. Top with buttered bread or cracker crumbs. Bake at 350 degrees F for about 30 minutes.

Recipe: Wow Wee Broccoli Casserole

This is a family favorite borrowed from my sister-in-law.
Ingredients
- 2 packages of frozen broccoli-chopped
- 1 cup mayo
- 1 can of cream of celery soup (can use mushroom or whatever)
- 2 Tbsp. minced onion
- 2 cups shredded cheese
- 2 eggs
- 1 cup Ritz crackers
Directions
Cook the broccoli according to package directions. Drain; Add onion, mayo, soup, cheese and eggs. Mix together thoroughly. Place in a buttered pan and top with Ritz crackers. Cook on 400 degrees F for 20-30 minutes.

Ingredients
- 1 pkg. frozen chopped broccoli, cooked 5 minutes, drained
- 1/2 cup mushroom soup
- 1/2 cup sharp grated cheese
- 1 beaten egg
- 1/2 cup mayonnaise
- 1 Tbsp. onion, grated
- salt and pepper, to taste
- 1/2 cup cheese cracker crumbs
Directions
Add all ingredients. Sprinkle top with crumbs. Bake, uncovered, 20 minutes at 400 degrees F.

Ingredients:
- 2 eggs beaten
- 1 cup mayonnaise
- 1 can cream of mushroom soup
- 2 pkgs chopped broccoli cooked (Use the frozen broccoli in the small boxes)
- 1 cup shredded cheddar cheese
Directions:
Mix all of the ingredients and bake for 45 minutes at 375 degrees F.
Our family likes to have this at our Thanksgiving dinner.

Ingredients:
- 2 (10 oz.) boxes chopped broccoli
- 1 small box Velveeta cheese
- 1 tube Ritz crackers
- 1 stick margarine
Directions:
Cook and drain broccoli. Put in 8-inch square pan. Slice cheese and lay on top of broccoli. Crush crackers and put on top. Melt margarine and drizzle on top. Bake at 350 degrees until cheese bubbles.

- 1 can cream of mushroom soup
- 1/2 cup mayonnaise

- 1 Tbsp. lemon juice
- 1 cup crushed cheese-flavored snack crackers
Directions:
Wash and place broccoli in a heavy saucepan. Steam 6-8 minutes until crisp-tender. Place in a casserole dish. In a bowl, combine soup, mayonnaise, cheese and lemon juice. Pour over broccoli. Sprinkle with crushed cracker crumbs. Bake uncovered at 350 degrees F. for 20-30 minutes until heated through.

Ingredients
- 2 packages. chopped frozen broccoli (10 oz. size)
- 1/2 cup butter
- 2 Tbsp. flour
- 1/2 tsp. salt
- 1 cup milk
- 1 egg, beaten
- 3/4 cup shredded American cheese
- Bread crumbs
- Paprika
Directions
Partially cook the broccoli and drain. Melt butter or margarine, add flavoring, flour, salt and milk. Cook, stirring until thickened. Remove from heat and slowly dribble in the beaten egg. Return to heat and cook for 1 minute. Add the cheese and stir. Pour over the partially cooked, drained broccoli and then put the mixture into a casserole. Top with bread crumbs, sprinkle with paprika, and bake at 350 degrees F for about 30-40 minutes, until cooked through and lightly browned. Serves 4-6

- 1 cup grated cheddar cheese

Cook broccoli in water for about 5 minutes. Drain well. Mix well. Mix together Miracle Whip, cheese, eggs and soup. Fold in broccoli. Place in a greased casserole dish. Top with crushed Ritz crackers and dot with butter. Bake 45 minutes at 350 degrees F. serves about 8.

- 2 pkg. frozen broccoli (10 oz.), whole or chopped
- 1/2 cup chopped onion
- 2 Tbsp. margarine or butter
- 1 can cream of mushroom soup
- 1/2 cup milk
- 1/4 cup grated sharp cheese
- 6 salted crackers
Directions
Boil broccoli with 1/4 cup onion until tender. Drain and place in a casserole dish. Mix grated cheese and 1/4 cup onion; add soup mixed with 1/2 cup milk. Pour mixture over broccoli. Roll crackers and mix with melted margarine. Sprinkle on top of casserole. Bake at 350 degrees F for 25-30 minutes or until brown and bubbly.

I don't have the one from Piccadilly although theirs is REALLY good. I'm about an hour north of Chattanooga. This one is the one that I make all the time and it is always a hit!
- 1 large bag frozen chopped broccoli
- 1 can cream of mushroom soup
- 1 cup mayonnaise
- 1 medium onion, chopped
- 1 cup grated cheddar cheese
- 1 egg, beaten
- 10-12 Ritz crackers
butter
Cook broccoli 5 minutes and drain. Mix remaining ingredients together except crackers. Add mixture to broccoli. Mix all well and pour in greased casserole pan. Top with crumbled Ritz crackers and dot with butter. Bake at 350 degrees for 45 minutes.

I haven't checked if its at this site, but kopycat.com has recipes from well known restaurants. Allrecipes.com is another good one. I got a broccoli casserole recipe off of this site for Thanksgiving. It had croutons for the topping and used fresh broccoli. It was a big hit! (11/27/2007)
