Broccoli Casserole I

Ingredients:

  • 2 eggs beaten
  • 1 cup mayonnaise
  • 1 can cream of mushroom soup
  • 2 pkgs chopped broccoli cooked (Use the frozen broccoli in the small boxes)
  • 1 cup shredded cheddar cheese

Directions:

Mix all of the ingredients and bake for 45 minutes at 375 degrees F.

Our family likes to have this at our Thanksgiving dinner.

Broccoli Casserole II

Ingredients:

  • 2 (10 oz.) boxes chopped broccoli
  • 1 small box Velveeta cheese
  • 1 tube Ritz crackers
  • 1 stick margarine

Directions:

Cook and drain broccoli. Put in 8-inch square pan. Slice cheese and lay on top of broccoli. Crush crackers and put on top. Melt margarine and drizzle on top. Bake at 350 degrees until cheese bubbles.

Broccoli Casserole III

Ingredients:

  • 2 lb. fresh broccoli
  • 1 can cream of mushroom soup
  • 1/2 cup mayonnaise
  • 1 cup shredded cheddar cheese
  • 1 Tbsp. lemon juice
  • 1 cup crushed cheese-flavored snack crackers

Directions:

Wash and place broccoli in a heavy saucepan. Steam 6-8 minutes until crisp-tender. Place in a casserole dish. In a bowl, combine soup, mayonnaise, cheese and lemon juice. Pour over broccoli. Sprinkle with crushed cracker crumbs. Bake uncovered at 350 degrees F. for 20-30 minutes until heated through.

Broccoli Casserole IV

Ingredients

  • 2 packages. chopped frozen broccoli (10 oz. size)
  • 1/2 cup butter
  • 2 Tbsp. flour
  • 1/2 tsp. salt
  • 1 cup milk
  • 1 egg, beaten
  • 3/4 cup shredded American cheese
  • Bread crumbs
  • Paprika

Directions

Partially cook the broccoli and drain. Melt butter or margarine, add flavoring, flour, salt and milk. Cook, stirring until thickened. Remove from heat and slowly dribble in the beaten egg. Return to heat and cook for 1 minute. Add the cheese and stir. Pour over the partially cooked, drained broccoli and then put the mixture into a casserole. Top with bread crumbs, sprinkle with paprika, and bake at 350 degrees F for about 30-40 minutes, until cooked through and lightly browned. Serves 4-6

Broccoli Casserole V

Ingredients

  • 2 package frozen broccoli
  • 1 cup Miracle Whip
  • 1 cup grated cheddar cheese
  • 2 beaten eggs
  • 1 can cream of mushroom soup
  • cheese Ritz cracker (crushed)
  • butter

Directions

Cook broccoli in water for about 5 minutes. Drain well. Mix well. Mix together Miracle Whip, cheese, eggs and soup. Fold in broccoli. Place in a greased casserole dish. Top with crushed Ritz crackers and dot with butter. Bake 45 minutes at 350 degrees F. serves about 8.

Broccoli Casserole VI

Ingredients

  • 2 pkg. frozen broccoli (10 oz.), whole or chopped
  • 1/2 cup chopped onion
  • 2 Tbsp. margarine or butter
  • 1 can cream of mushroom soup
  • 1/2 cup milk
  • 1/4 cup grated sharp cheese
  • 6 salted crackers

Directions

Boil broccoli with 1/4 cup onion until tender. Drain and place in a casserole dish. Mix grated cheese and 1/4 cup onion; add soup mixed with 1/2 cup milk. Pour mixture over broccoli. Roll crackers and mix with melted margarine. Sprinkle on top of casserole. Bake at 350 degrees F for 25-30 minutes or until brown and bubbly.

You can make a meal out of this recipe by adding chicken that has been cooked and deboned. It is scrumptious. My young grandchildren even love it.
