Ingredients
- 1 lb. ground beef
- 1 cup chopped onion
- 3/4 cup chopped green pepper
- 1 clove garlic, minced
- 1 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 tsp. chili powder
- 5 cups sliced zucchini
- 2 large tomatoes (peel and chop)
- 3 ears fresh corn
- 2 Tbsp. chopped pimento (fresh red pepper works)
- 1/4 cup chopped parsley
Directions
Saute beef, onions, green pepper, and garlic. Add remaining ingredients. Cover and simmer 10-15 minutes.
Source: This is a recipe my mom always made. I love it in the summer... a good way to use the garden vegetables.
