Manual and Cutters for Sunbeam Pie Maker #4808
I was given a Sunbeam Pie Maker (makes 2 pies). The model number is 4808. However, I didn't get the manual for it. Also, I discovered that there might be pastry cutters that are supposed to come with it but I didn't get those either. So I guess I have two questions. First, does anyone know if I actually need the pastry cutters? Second, does anyone have a copy of the manual that they could share? Thanks!

Freeze Leftover Holiday Chocolate
If you have too much chocolate left over from Easter and the kids lose interest or you want them to ease off, here's what you can do. You can cut it into little pieces and freeze it. When you make chocolate chip cookies, chocolate chip muffins, or anything else needing chocolate, all you need to do is pull out some of the chocolate pieces from the freezer and you are set! No need to buy any chocolate chips until you are all out of the leftovers!

Use Freezer Burned Veggies for Soup
Everyone has told me that once as bag of veggies is freezer-burned that it's no good, and you'll have to throw it out. This is not true! There is one thing you can do with freezer burned veggies and that's make homemade veggie soup. What you do is run warm water into the bag and let it sit until all the freezer burn and frozen water has melted. Now rinse the veggies off with fresh, clean water several times You can use a colander if you like, but I just poke several holes in the bottom of the bag and run tap water through the bag. Then just put the veggies in your favorite type of soup stock and use a lot of flavoring; like onion, garlic, soy sauce, Italian seasoning and bouillon. You won't taste the freezer-burn.

Use Non Fat Dry Milk for Coffee Creamer
Coffee creamer that is actually good for you. Use non fat dry milk as coffee creamer. There is no need to pre-mix dry milk with water, just use it as is. You can use as much as you like, without the fat. Your coffee will taste just as good as coffee creamers that have questionable additives like high fructose corn syrup. Canned "no fat milk" is also good, but it is more expensive. If you're big on coffee, like me, this will also help keep off the pounds. Enjoy!

Creamy Fiddlehead Soup
Ingredients:
- 1 1/4 lb. fiddleheads cleaned well
- 4 cups stock
- 1 cup evaporated milk
- 1 Tbsp. garlic, minced
- 1/2 tsp. oregano
- 1/2 tsp. basil
- 1/2 cup minced celery
- 1 tsp. parsley
- 1 cup applesauce
- 1 1/2 cups green tomatoes, chopped
- Salt and pepper to taste
Directions:
Puree all but 1/4 cup of fiddleheads. Chop the remaining 1/4 cup of fiddleheads into small pieces, set aside.>
Place all the ingredients in a large pot except for the milk. Simmer until the larger pieces of fiddleheads are tender. About 40 minutes on low heat. Add milk and simmer 20 more minutes.
Serve piping hot with biscuits, bread or dumplings.

Easier Than Pie Cobbler
Easy as a breeze. I personally love cherry. ;-)
Ingredients:
- 1 cup sugar
- 1 cup flour
- 1 tsp. baking powder
- 1 Tbsp. vegetable oil
- 1 can fruit (drained) or fruit pie filling
Directions:
Mix sugar, flour, baking powder and vegetable oil. Spread 1/2 of the crust mixture in a slightly greased, 8x8 inch baking pan. Carefully spread fruit evenly over bottom crust mixture. Top with remaining crust mixture.
Bake at 375 degrees F for about forty five minutes to an hour or until lightly browned.

Cheesy BBQ Chicken
Tastes just like Chili's Montery Chicken!
Ingredients:
- 4 boneless, skinless chicken breasts
- 8 slices of bacon, cut in half
- 1 onion, caramelized
- 1 bottle of BBQ sauce (or homemade)
- shredded cheese (Cheddar or Colby jack shredded cheese blend)
Directions:
Place chicken breasts in large zip lock bag and pour enough BBQ sauce in bag to cover the chicken. Marinate them in the fridge from about 30 minutes. Preheat oven to broil HI, with rack 4 inches from heat. In a large oven proof skillet (I used my trusty cast iron skillet), over medium heat, saute chicken until mostly done, about 4 minutes per side. Pour some BBQ sauce over chicken. Place desired amount of onions* on the chicken. Cover with cheese (how ever much you want) Place bacon on top. Place pan in the oven and broil until the bacon has crisped up, about 5 minutes. Or until the chicken reads 165 degrees F on a instant read thermometer.
*Caramelize Onions
Preheat oven to 425 degrees F. Thinly slice your desired amount of onions. Coat lightly with vegetable oil. Season with salt and pepper. In a dutch oven or casserole dish fitted with a lid, bake for around 1 hour, or until desired color is reached Make sure you stir them every 15 minutes so they don't burn.

Mystery Pudding
Ingredients
- 1 cup sugar
- 1 cup flour
- 1 tsp. salt
- 1 tsp. soda
- 1 egg, beaten
- 1 tsp. vanilla
- 2 cups fruit cocktail and juice
- 1 cup brown sugar
- 1/2 cup chopped nuts (walnuts)
Directions
Sift together sugar, flour, salt and soda. Beat egg and add vanilla, fruit cocktail and juice. Turn into greased dish - do not have it too thick. Over the top sprinkle a mixture of brown sugar and chopped nuts. Bake 3/4 hour at 325 degrees F. Serve with whipped cream and top with cherries.
You can serve it with ice cream also. You can reheat it also. Will keep in fridge.

Sweet Grape Nuts Bread
Good and easy recipe.
Ingredients:
- 1/2 cup sugar
- 1 egg
- 1 cup milk
- 1/2 tsp. baking powder
- 2 cups flour
- 1/2 tsp. soda
- 1/2 cup Grape Nuts cereal
- 1/2 tsp. salt
- 1/2 tsp. vanilla
Directions:
Combine all ingredients in bow; mix well. Pour into greased loaf pan. Bake at 375 degrees F for 40 minutes or until bread tests done.

Barbecue Cups
Ingredients
- 3/4 lb. ground beef, browned
- 1/2 cup barbecue sauce
- 1 Tbsp. minced onion
- 2 Tbsp. brown sugar
- 1 can refrigerator flaky biscuits
- 3/4 cup grated cheddar cheese
Directions
To browned beef, add barbecue sauce, onion and brown sugar. Press each of the flaky biscuits into ungreased muffin cups (up to edge) and spoon in meat. Top with grated cheddar cheese. Bake at 400 degrees F for 10-12 minutes.

Cucumber-Yogurt Salad
Healthy, tasty salad.
Ingredients:
- 2 lg. cucumbers, thinly sliced
- 1 Tbsp. coarse salt
- 2 cup low-fat yogurt
- 1/2 cup low fat sour cream
- 1 tsp. ground cumin
- 1/4 cup chopped fresh cilantro
- 1/2 tsp. salt
- 2 med. tomatoes, seeded, chopped
- curly leaf lettuce
Directions:
Sprinkle cucumbers with coarse salt; cover. Let stand, covered, for 30 minutes. Rinse several times in cold water; drain well. Squeeze dry with paper towels. Set aside. Mix yogurt, sour cream, cumin, cilantro and 1/2 teaspoon salt in small bowl. Chill, covered, until serving time. Combine cucumber, yogurt mixture an tomatoes in large bowl; toss gently to mix well. Spoon into lettuce-lined salad bowl.

Biscuit-Topped Chicken
Yummy hot meal!
Ingredients:
- 2 cups chopped, cooked chicken
- 1 cup chopped cooked broccoli, drained
- 1 can cream of chicken soup
- 1/4 cup chopped onion
- 1/4 cup mayonnaise
- 1 1/2 tsp. Worcestershire sauce
- dash curry powder
- 1/2 cup shredded cheddar cheese
- 1 can refrigerator biscuits (10 count)
- 1/4 cup sour cream
- 1 egg
- 1 tsp. celery seed
- 1/2 tsp. salt
Directions:
Combine chicken, broccoli, soup, onion, mayonnaise, Worcestershire sauce and curry powder in 1 1/2 qt. casserole; mix well. Bake for 20-25 minutes at 375 degrees F, or until bubbly. Sprinkle with cheese. Separate biscuits; cut into halves. Arrange cut side down around edge of casserole. Combine sour cream, egg, celery seed and salt in bowl; blend well. Spread over biscuits. Bake for 25-30 more minutes or until golden brown.

Strawberry Butter Torte
Love this because I love strawberries! Very yummy!
Ingredients:
- 1/4 cup melted butter
- 1 cup vanilla wafer crumbs
- 1/2 cup butter, softened
- 2 1/2 cup confectioners' sugar
- 2 eggs
- 1 1/2 cups sliced fresh strawberries
- 1 cup whipping cream
- 1/4 cup sugar
- 1/2 cup vanilla wafer crumbs
Directions:
Combine melted butter and 1 cup crumbs in bowl; mix well. Press over bottom of 8x8 inch dish. Combine remaining softened butter and confectioners' sugar in mixer bowl. Beat until light and fluffy. Add eggs; beat well. Spread over crumbs. Spoon strawberries on top. Whip cream with sugar in bowl until soft peaks form. Spread over strawberries. Sprinkle remaining crumbs on top. Keep refrigerated.
