Sweet and Sour Meatballs

Ingredients:

  • 1 envelope onion soup mix
  • 1/2 cup water
  • 2 eggs
  • 2 lbs. ground beef
  • 1 (16 oz.) can sauerkraut, drained well/snipped
  • 1 (8 oz.) can whole cranberry sauce
  • 3/4 cup chili sauce
  • 3/4 cup water
  • 1/3 cup brown sugar, packed

Directions:

In mixing bowl, combine dry onion soup mix and 1/2 cup water. Beat in eggs with fork. Add ground beef and mix well. Shape mixture into 40 meatballs. Brown well, draining off excess fat. Combine sauerkraut, cranberry sauce, chili sauce, 3/4 cup water, and brown sugar. Pour half the mixture into bottom of 9x13 inch pan. Place meatballs over the sauce mixture in baking dish. Pour remaining mixture over meatballs. Cover with foil and bake 325 degrees F for 20 minutes. Uncover and bake 15-20 minutes longer. Serve over hot cooked rice.

Sweet and Sour Meatballs

I usually don't have much time to make things from scratch, so I usually use frozen meatballs, but any recipe that you like is fine.

Ingredients:

  • 1 large bag frozen meatballs
  • 1 jar duck sauce
  • 1 jar sweet and sour sauce
  • 1/2 cup honey

Directions:

Put all into crock pot, cover and heat on low for at least 4 hours. If the sauce is not thick enough, remove the meat balls into a large bowl. Leave the lid off the crock, and turn it to high for 30 minutes, or until the sauce thickens. Return the meatballs to the sauce, and stir well.

May serve on a platter with toothpicks inserted into each, and either spoon the sauce over, or serve in a bowl along side for dipping.

Servings: 6-8
Prep Time: 5 Minutes
Cooking Time: 4 Hours

Asian Meatballs with Chili Spaghetti

Ingredients

Meatballs:
  • 450 g (16 oz.) minced beef
  • 2 Tbsp. fresh root ginger, grated
  • 4 cloves garlic, grated
  • 50 g (2 oz.) coriander, roughly chopped
  • 1 spring onion, chopped
  • 3 Tbsp. rice wine
  • freshly ground black pepper
  • 1 tsp. sesame oil
  • 3 Tbsp. Kikkoman Soy Sauce
  • 2 tsp. sugar
  • 2 red chillies, grated
  • vegetable oil, for frying
  • 2 egg yolks
Spaghetti:
  • 300 g (10 oz.) spaghetti
  • 3 Tbsp. olive oil
  • sweet chili sauce
  • grated chilli, to garnish

Directions:

Combine the beef, ginger, garlic, coriander, spring onion, rice wine, pepper, sesame oil, soy sauce, sugar, chili, and egg yolks in a bowl. Mix well and shape into small meatballs. Heat a little vegetable oil in a wok or saucepan and fry the meatballs for 6-8 minutes in batches if required, until nicely browned and cooked through. Remove with a slotted spoon and drain on kitchen paper.

Meanwhile, cook the spaghetti according to the packet instructions and when cooked, remove from the heat and drain well. Season with black pepper and toss with the olive oil then distribute amongst four bowls. Top with the meatballs and a generous drizzle of sweet chili sauce then garnish with some grated chili.

Hawaiian Meatballs

Serve over a bed of basmati rice, short grain rice or orzo pasta.

Ingredients:

  • 1 1/2 pounds ground beef
  • 2/3 cup Panko crumbs
  • 1/3 cup dried minced onion
  • 1 egg
  • 1/4 cup milk
  • 1 1/2 tsp. ground ginger
  • 1/2 tsp. salt
  • 1 Tbsp. extra virgin olive oil
  • 2 Tbsp. cornstarch
  • 1/2 cup packed brown sugar
  • 1 (15 oz.) can pineapple chunks, drained and reserve juice
  • 1/3 cup white vinegar
  • 1 Tbsp. soy sauce
  • 1/3 cup chopped bell pepper

Directions:

Combine ground beef, panko crumbs, onion, egg, milk, ginger, and salt in a large bowl. Shape mixture by rounded tablespoonfuls into meatballs.

Mix cornstarch, brown sugar, reserved pineapple juice, vinegar, and soy sauce in a small bowl until smooth.

Heat olive oil in a large skillet over medium heat. Place meatballs in skillet and cook until evenly browned and meat is no longer pink. Drain excess fat.

Pour sauce mixture into the skillet with meatballs and cook, stirring constantly, until mixture thickens and boils, about 5 minutes. Stir in the bell pepper and pineapple chunks. Heat through and serve.

Berriyaki Meat Balls

Servings: 4 dozen

Ingredients:

  • 1 lb. ground beef
  • 1/2 lb. sausage
  • 1/2 c. fine bread crumbs
  • 2 eggs, slightly beaten
  • 1 can condensed consomme
  • 1 c. cranberry sauce
  • 1 tsp. soy sauce
  • 1 tsp. ginger
  • 1 tsp. cinnamon

Directions:

Combine beef, sausage, crumbs and eggs. Shape into small balls. Ina large skillet, brown meat. Drain fat. Stir in remaining ingredients.Cook over low heat until liquid is reduced to a glaze. Keep warm in a chafing dish.

Vegetarian Sweet and Sour Meatballs

Meatballs:

  • 4 eggs
  • 1 cup shredded Cheddar cheese
  • 1/2 cup cottage cheese
  • 1/2 cup finely chopped onion
  • 1 cup finely chopped pecans
  • 1 teaspoon dried basil
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon dried sage
  • 2 cups Italian seasoned bread crumbs

Sweet and Sour Sauce:

  • 1/4 cup vegetable oil
  • 1/4 cup white vinegar
  • 3/4 cup apricot jam
  • 1 cup ketchup
  • 1/4 cup minced onion
  • 1 teaspoon dried oregano
  • 1 dash hot pepper sauce

Preheat the oven to 350 degrees F (175 degrees C).

In a large bowl, mix together the eggs, Cheddar cheese, and cottage cheese until well blended. Mix in 1/2 cup onion, pecans, basil, salt and sage. Stir in bread crumbs. Form the mixture into 2 inch balls, and place them in a 9x13 inch baking dish.

In another bowl, whisk together the vegetable oil, vinegar, apricot jam, ketchup, 1/4 cup onion, oregano and hot pepper sauce. Pour over meatballs.

Bake uncovered for 35 to 40 minutes in the preheated oven, until meatballs are firm, and sauce is thick and bubbly.

Pineapple Meatballs

Ingredients

  • 1 1/2 lbs. ground beef
  • 2/3 cup evaporated milk
  • 1/2 cup chopped onions
  • 2/3 bread crumbs
Sauce:
  • 1 1/2 cup drained pineapple, juice and water to make 1 cup of liquid
  • 2 Tbsp. cornstarch
  • 1/4 cup brown sugar
  • 1/4 cup of vinegar
  • 2 Tbsp. soya sauce

Directions

With first ingredients, make patties and brown. Cook sauce until thickened and pour over patties. Cook for 15 minutes. Green peppers, celery and mushrooms can be added in the last 15 minutes.

Sweet and Savory Meat Balls

Ingredients

  • 1 lb. ground beef
  • 1/4 cup bread crumbs
  • 1/4 cup chopped onion
  • 1 egg, slightly beaten
  • 1 small glove garlic, minced
  • 1 can golden mushroom soup
  • 1 can tomato soup
  • 2 Tbsp. vinegar
  • 2 Tbsp. brown sugar
  • 2 tsp. soy sauce
  • dash pepper
  • cooked rice

Directions

Mix beef, crumbs, onion, egg and garlic; shape into meat balls. Brown meat balls. Add remaining ingredients, except rice. Cover; cook over low heat 20 minutes or until done. Stir now and then. Serve with rice.

Makes about 3 1/2 cups.

Combine hamburger, mil, salt, pepper, Worcestershire sauce, bread crumbs, onion and egg.


Shape ground beef, milk, salt, pepper, cracker crumbs into meatballs. Place in baking dish single layer.


Mix meat, crumbs, egg and salt and roll into small balls. Broil in oven or fry pan on top of stove until meatballs are brown.


Shape first 5 ingredients into meatballs. Mix flour and egg and dip balls into (may need to increase amounts). Brown in 1/3 cup oil. Remove all but 1 Tbsp. oil. Add pineapple juice and broth and simmer.


Mix well. Make into balls. Put 3/4 cup cooking oil in skillet. Heat to at least 375 degrees F. Dip meat balls in batter and fry golden.


In saucepan, heat cranberry sauce. When almost melted, start adding hot sauce, stirring constantly. Once cranberry sauce is melted, add meatballs.


Cook meatballs in skillet; remove. Drain fat from skillet. Mix brown sugar and cornstarch in skillet. Stir in pineapple (with juice), vinegar, and soy sauce.
