Mixed Vegetable Grill
- heavy-duty foil
- 1 package frozen mixed vegetables (10 oz.)
- 1/4 tsp. salt
- dash pepper
- 2 tomatoes, cut in wedges
- 1/4 cup green pepper, chopped
- 2 Tbsp. butter
Place frozen vegetables on foil. Sprinkle with salt and pepper. Top with remaining ingredients. Fold edges of foil over twice and seal. Place on rack in grill, 6-8 inches above hot coals. Roast 30-40 minutes or until tender. Or bake in 400 degree F oven for 1 hour and 15 minutes. Turn foil package frequently for even cooking and to avoid burning.
Note: Any vegetable with your favorite seasonings may be used.
