Vegetarian Stuffed Mushrooms (Freezer Meal)

freezer mealsThese vegetarian appetizers are as delicious as they are easy. Highly flavorful, your can guarantee your guests will go back for seconds and thirds.

List of Ingredients:

  • 2 tablespoons of olive oil
  • 1 10 oz package of mushrooms
  • 1 small onion finely diced
  • 1/4 teaspoon of garlic salt
  • 1/4 teaspoon of pepper
  • 1/2 cup of flavored breadcrumbs
  • 1/2 cup of shredded mozzarella
  • Olive oil cooking spray

Directions

  1. Preheat oven to 350 degrees
  2. Spray cookie sheet with cooking spray.
  3. Clean mushrooms. Remove and save stems.
  4. Finely chop stems.
  5. In a saucepan, sauté the onions and stems in olive oil until soft.
  6. Add garlic salt and pepper.
  7. Mix in breadcrumbs.
  8. Mix in cheese.
  9. Use a teaspoon to fill mushroom caps with stuffing.
  10. Place stuffed mushrooms on cookie sheet and spray lightly with cooking spray.
  11. Bake for 30 minutes or until brown on top.

Freeze in a single layer in a thin, covered container.

Directions for preparing frozen mushrooms:

Cooked mushrooms can be frozen and heated in a 350-degree oven for about 15 minutes.
