Cauliflower Scallop

A great way to do cauliflower!


  • 1 can cream of celery soup
  • 1/2 cup milk
  • 2 eggs, slightly beaten
  • 1 cup cheddar cheese, shredded
  • Ad
  • 3/4 cup soft bread crumbs
  • 1/4 cup parsley, snipped
  • 1/4 cup pimento, chopped
  • 1 Tbsp. minced dried onion
  • 2 pkg. frozen cauliflower, cooked and drained


Combine soup, milk and eggs. Stir in half of the cheese, bread crumbs, parsley, pimento, onion, 1/2 tsp. salt and a dash of pepper. Chop cauliflower. Stir into soup mixture. Turn into a 10x6 inch baking dish. Bake at 350 degrees F for 35 minutes. Top with remaining cheese and bake for 5 minutes more. Serves 6-8.
