Soda Cracker Bars

Tastes like Heath Bars.

  • 1 cup butter
  • 1 cup brown sugar
  • 6 ounces chocolate chips
  • 6 ounces butterscotch chips
  • soda crackers
  • 1 cup chopped nuts, optional
Preheat oven to 400 degrees F. Place soda crackers in buttered cookie sheet with edges. Boil butter and brown sugar for 3 minutes. Pour over crackers. Bake for 5 minutes. Cool slightly and spread on chips to make frosting. Sprinkle on nuts.

Lentils and Cheese

When all six kids were at home and I was feeding us on $35 a month, this was a favorite. Lentils are cheap, and my husband grew all the vegetables. Served with mashed potatoes with butter and a veggie like corn or green beans, we thought this was fine eating. We used to say that the poor king had to eat pickled butterfly eyebrows and such, but hearty food was fit for a peasant.

  • 12 oz. dry lentils (1 1/4 cup), cooked soft
  • 2 cups water
  • 1 bay leaf
  • 2 tsp. salt
  • pepper to taste
  • A pinch each of thyme, sage and marjoram
  • 2 large onions, chopped
  • 2 cloves of garlic, minced
  • A 16 oz. can of tomatoes, or a pint of home-canned
  • 2 carrots, sliced thin
  • 1/2 cup celery, sliced
  • 1 bell pepper, chopped
  • 2 tablespoons parsley
  • 3 cups grated cheddar cheese, sharp if you can afford it
Mix together everything except the celery, carrots and cheese. Cover tightly and bake 40 minutes. Then stir in the bell pepper and parsley, top with cheese, and bake until the cheese is nicely melted.

Note: The lentils take about 30 minutes when cooked in 3 1/2 cups water.

Summertime Salad With Honey Dressing

  • 4 cups cubed cooked chicken
  • 1 1/2 cups fresh peach cubes (about 2 peaches)
  • 1 1/2 cups fresh pineapple cubes
  • 1 cup fresh sliced strawberries
  • 1 cup chopped celery
  • 3/4 cup slivered almonds
  • 1/2 cup chopped red onion
Honey Dressing Ingredients
  • 1 cup mayonnaise
  • 3/4 cup peach preserves or orange marmalade
  • 1 tablespoon honey
  • 2 teaspoons Dijon mustard
  • 1/2 teaspoon salt

Directions

In a large bowl, combine chicken, fruit, celery, almonds and onions. Mix dressing in a small bowl. Pour about 1/2 cup (just enough to moisten) over chicken mixture; toss to coat. Cover and chill salad and leftover dressing for several hours. Add remaining dressing just before serving. Serves-6-8

Valentine's Day Recipe: Chocolate-Covered Strawberries

Here's a perfect romantic recipe to make on this Valentine's Day: chocolate-covered strawberries. And it's so easy to make!

CHOCOLATE-COVERED STRAWBERRIES

  • 10 strawberries
  • 1 8oz chocolate bar

Wash strawberries, and dot with paper towels to dry. The strawberries have to be really dry, otherwise the chocolate won't stick to them.

Put the chocolate in a microwave-safe bowl, and microwave for several minutes until melted.

Put a piece of parchment paper on the counter (so the chocolate strawberries don't stick). But if you don't have parchment paper, you can use a piece of foil or a large plate.

Dip strawberries in chocolate, and lay on the parchment paper.

Refrigerate for 30 minutes, so the chocolate hardens.

Enjoy!

Healthy Banana Bars (Diabetic and Low Cholestrol)

This is a recipe that my friend recently gave to me. She made this recipe to use as a snack for her husband who is a diabetic, and also has to watch his cholesterol. It is very good and very good for you.

Mix together dry ingredients:

  • 1/2 cup Chopped Almonds
  • 1 cup Oatmeal
  • 1 cup Whole Wheat Flour
  • 2 teaspoons Cinnamon
  • 1/2 teaspoon Ginger
  • 1/2 teaspoon Cloves,
  • 1 1/2 teaspoons Soda
  • 1/4 cup Konsyl
  • 1/2 to 1 cup raisins as you like
  • 1/2 cup Splenda (optional)
  • 1/4 cup Flax Seed (Optional)
Note: Konsyl is a sugar free 100% Psyllium Fiber product available at the pharmacy. This is added because most people do not get enough fiber in their diet.

Mix together liquid ingredients:

  • 1/4 cup Olive Oil or Canola Oil
  • 1 cup Non Fat Buttermilk
  • 1 cup Unsweetened Applesauce,
  • 1 large mashed banana (1/2 to 3/4 cup)
Stir the liquids into the dry mixture thoroughly, making sure they are all moistened. Spray a 9X13 pan with a non-stick spray, and pat the dough evenly in the pan. Bake for 25-30 minutes at 350 degrees F. Cool and cut in squares.

To get the health benefits, be sure to use Whole Wheat Flour (preferably Stone Ground), and the Konsyl. Do not substitute or omit these ingredients.

Hot Dogs in Pocketbooks

  • Hot dogs
  • Cheese
  • Fresh bread
Butter one side of a fresh slice of bread. On the opposite side, lay a thin slice of cheese, then a hot dog. Fold two corners of bread up to point and fasten with a toothpick. Lay on lightly greased cookie sheet. Bake at 400 degrees F until bread is lightly toasted. It is best to have hot dogs at room temperature. Bread must be very fresh or it will break when folded up to make the little pocketbooks.

Home Made Liver Paste

  • 1 pound chicken livers
  • 2/3 cup chopped onions
  • 1/3 cup applesauce
  • 1 teaspoon salt
  • 1/4 teaspoon dried thyme leaves
  • 1/4 teaspoon pepper
Saute chicken livers for 3 minutes. Add onions, applesauce and spices. Cook and stir about 5 minutes. Stir in 1/4 cup brandy or wiskey, 1/4 cup heavy cream. Put in blender or food processor until smooth. Refrigerate 1-1 1/2 hours. Whip 1/2 cup butter and blend into cooled liver mixture. Refrigerate for at last 2 hours or until set up some what. Store covered. Serve on crackers or rye bread.

Chicken Surprise Recipe

Take one large chicken breast, cut it in half and then make a slit in the breast where you just cut to make a pocket. Use 1 med-large Mushroom cap and cut it into lengths to fit inside the chicken breast, then get a small handful of shredded cheese and put it inside or on top of mushroom, 2-4 thin slices of Prosciutto or Bacon rashes and wrap it around the Chicken breast. Secure it with toothpicks to stop cheese from coming out or you can leave the bacon/proscuitto out. Put it on a baking tray in a pre-heated oven on about 170 degrees C for about 45 minutes or when chicken is cooked. Serves 2 with a side plate of steamed vegetables. Very yummy, Enjoy! I used a gas oven.
