A hearty soup to usher in the cooler days. A definite tummy warmer, and pretty healthy, too!
Cook veggies in oil from browning chicken and 1 cup broth till tender. Add tomatoes, rest of broth, and chicken; bring to a boil. Add beans and seasonings, simmer for 30 minutes. Adjust seasonings. Add Kale, simmer for 10 more minutes. 10 minutes before serving, add the fresh pasta, cook till just tender. Serve with fresh Parmesan. Serves 8 plus.
This is the kind of soup you can totally adjust to your taste - veggies, meat, seasonings. Adding the tortellini to a minestrone type soup was my inspiration.
