Today's Recipes


K Is For Kart-Wheels

Ingredients

  • 1 1/2 cups flour
  • 1/2 cup butter, softened
  • 1/4 cup powdered sugar
  • 1/2 tsp. baking powder
  • 2 Tbsp. milk
  • 1 cup pie filling or jam (any flavor)

Directions

Heat oven to 375 degrees F.

Mix flour, butter, powdered sugar, baking powder and just enough milk until dough forms. (If dough seems dry, mix in more milk, 1 tsp. at a time.)

Divide dough into 6 equal parts.

Shape each part into a ball.

Place on an ungreased cookie sheet, flatten slightly.

Make an indentation about 3/4 inch deep in center of each flattened ball.

Fill each indentation with about 2 Tbsp. pie filling or jam.

Bake until edges begin to brown about 20-25 minutes makes 6 kart wheels

I Is For Ice Cream Sandwiches

Ingredients

  • Peanut butter cookies (see recipe below)
  • 1 pint ice cream (any flavor) slightly softened
  • 1 (6 oz) bag semi sweetened chocolate chips
  • 2 Tbsp. shortening

Directions

Bake cookies, let cool.

For each ice cream sandwich, press 1 slightly rounded tablespoon of ice cream between 2 cookies. Place in pan freeze until firm. Melt chocolate chips and shortening, stirring occasionally. Let stand 2 minutes. Dip half of sandwich into chocolate.

Place in pan. Freeze until firm. Store wrapped in plastic wrap. Makes about 15 sandwiches.

Peanut Butter Cookies

Ingredients

  • 1/2 cup sugar
  • 1/2 cup brown sugar(packed)
  • 1/2 cup peanut butter
  • 1/4 cup shortening, softened
  • 1/4 butter, softened
  • 1 egg
  • 1 1/4 cups flour
  • 3/4 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt

Directions

Heat oven to 375 degrees F. Mix all ingredients. Shape into 1-1/4 inch balls.

Place 3 inches apart on cookie sheet.

Flatten in crisscross pattern with floured fork.

Bake at 375 degrees F until brown (9-11 minutes.)

H Is For Honey Bee Cookies

Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup (packed) brown sugar
  • 1/2 cup honey
  • 1 egg
  • 1 1/2 cups flour
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 tsp. ground cinnamon

Directions

Heat oven to 375 degrees F.

Mix butter, brown sugar, honey, and egg in medium bowl on medium speed, scraping bowl constantly until smooth. Stir in remaining ingredients. Drop by teaspoonfuls onto ungreased cookie sheet.

Bake until set and light brown in color (7-9 minutes) surfaces will appear shiny. Let stand about 3 minutes before removing from cookie sheet.

Makes about 36 cookies.

Bubble Cookies

Ingredients

  • 2 cups sugar
  • 2 cups brown sugar
  • 1 cup shortening
  • 4 eggs
  • 1/3 cup water
  • 2 Tbsp. vanilla
  • 1 Tbsp. soda
  • 1 Tbsp. cream of tartar
  • 5 cups flour

Directions

Mix, drop on greased cookie sheet. Bake 12 minutes at 350 degrees. Take out while soft.

Homemade Salsa

Homemade Salsa I

Ingredients:

  • 1 28 oz. can of tomatoes
  • 2 tablespoons lime juice
  • 1/4 cup of red onions (chopped)
  • 1/4 cup of cilantro (chopped)
  • 1/4 cup of jalapeno (chopped)

Directions:

Mix all ingredients in food processor.

Homemade Salsa II

Serves: 4 (About 1 cup)

Ingredients:

  • 1 large tomato (seeded and chopped)
  • 3 green onions (chop entire onion)
  • 1/3 cup packed chopped fresh cilantro
  • 1 tablespoon fresh lime juice
  • 1 tablespoon jalapeno (seeded and chopped)
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt

Directions:

Combine all the ingredients in a bowl; mix well. Leave at room temperature for 30 to 60 minutes for flavors to mingle.

Nutritional Information Per Serving: (1/4 cup) Calories: 20, Fat: 0g, Cholesterol: 0mg, Sodium: 306mg, Carbs: 4g, Fiber: 1g, Sugars: 3g, Protein: 1g

Homemade Salsa III

Ingredients

  • 1 (14.5 - oz.) can diced tomatoes
  • 1/4 cup rough chopped onion
  • 3 Tbsp. canned diced jalapenos
  • 1 Tbsp. white vinegar
  • 1 tsp. salt
  • 1/4 tsp. cumin

Directions

Combine all ingredients in food processor and process until nearly pureed, yet still chunky. Pour into covered container and store in fridge. Best if made at least an hour ahead of time to let flavors develop. Stir well before serving.

Homemade Salsa IV

Here is a great salsa recipe:

Ingredients

  • 1 Qt jar tomatoes or 28 oz canned tomatoes
  • 1-2 cups Jalapenos
  • 1 Tbsp. Garlic Powder
  • 1 tsp. Salt
  • 1/2 Tbsp. Cilantro

Directions

In a blender, mix the Jalapenos and Tomatoes on pulse for chunky or puree for more liquid. Pour into a medium size bowl and add spices, mix well. Allow to chill for about 30 min to 1 hr then enjoy with tortilla chips. More or less of any ingredient may be used according to taste.

Shepherd's Pie - Tips and Recipes

Tips and recipes for making Shepherd's Pie.

When I make shepherd's pie, I add a layer of bread filling such as you use to stuff a turkey . This stretches my meal and we all love the taste of bread filling with the hamburg and onion layer, peas layer, mashed potato layer, bread filling layer and another layer of mashed potatoes on top with a little melted butter over top to brown when baked. Delicious!

J Is For Jelly Roll

Ingredients

  • 3 eggs
  • 1 cup sugar
  • 1/3 cup water
  • 1 tsp. vanilla
  • 3/4 cup flour
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 2/3 cup jelly or jam
  • powdered sugar

Directions

Heat oven to 375 degrees F.

Line a jelly roll pan 15 1/2 x 10 1/2 x 1 inch. With aluminum foil, then grease with shortening.

Beat eggs in large mixing bowl on high speed until thick and lemon colored gradually beat in flour, baking powder and salt until smooth. Pour into pan, spread to corners.

Bake at 375 degrees F for 12-15 minutes or until toothpick inserted in center comes out clean. Generously sprinkle with powdered sugar on a towel a little larger than the cake.

Immediately loosen cake from pan and turn over onto the towel. Carefully remove foil.

Trim off any crisp edges of cake

While hot, carefully roll cake and towel from narrow end. Let cool on wire rack about 30 minutes.

Unroll cake and remove towel.

Beat jelly with fork just enough to soften, spread over cake.

Roll up cake and sprinkle with powdered sugar.

Fudge the Fast Way!

Ingredients

  • 5 cups white sugar
  • 1 Canned milk
  • 2 Pkgs. Milk Chocolate chips 12 oz ea
  • 1 tsp. Vanilla flavoring

Directions

First grease 2 Cake pans. Get a Medium size sauce pan and pour the sugar, chocolate chips and canned milk in then and bring to a boil stirring constantly.

Let boil seven minutes. Remove from heat.

Add vanilla and stir.

Pour contents into cake pans.

Let cool.
