I've been making Miracle Whip cake for over 40 years now, and it has always risen to at least the top of the pan, but the last couple of times I made it, it only raised about half way up the pan. Does anyone know what the problem could be? Just today, I baked 2 in a row thinking I had done something wrong, but they both only raised half way.

Line 8 inch square pan with foil. Place peanut butter chips, 2/3 cup sweetened condensed milk and butter in medium microwave-safe bowl. Place chocolate chips and remaining sweetened condensed milk in second medium microwave safe bowl. Microwave bowl with peanut butter chips on high 1 minute or until chips are melted and mixture is smooth when stirred; stir in 1/2 tsp. vanilla. Immediately pour and spread evenly into prepared pan. Microwave bowl with chocolate chips at high 1 minute or until chips are melted and mixture is smooth when stirred; stir in remaining vanilla. Immediately pour and spread evenly over peanut butter layer; cool. Cover. Refrigerate until firm. Remove from pan; place on cutting board. Peel off foil; cut into 1 inch squares. Store tightly covered container in refrigerator. About 2 dozen pieces of fudge.

Cook chicken and cut into bite sized pieces. Mix soups, milk, onion and salsa in bowl. Butter 9x13 inch dish and add about 1/3 of tortilla pieces. Add a layer of chicken (about 1/3) then 1/3 of the soup mixture. Repeat with 2 more layers of each. Sprinkle with cheese and bake in covered dish at 300 for 1 1/2 hours. Serves 12.

Cream Cheese Brownies:
Here is a totally decadent dessert - Brownies covered with cream cheese and chocolate chips! Hey! It's summer- We can walk it off.

Directions:
Mix the cake ingredients as directed on the box. Spread the mixture on a cookie sheet pan. Soften the cream cheese in the microwave and mix with the sugar and the egg white.
Spoon the cream cheese mixture over the cake batter and swirl around. Sprinkle with the chocolate chips and nuts.
Bake at 350 degrees for 20 minutes.

Cream Cheese Brownies II

Prepare One-Bowl Brownies as directed (see recipe below), using 4 eggs. Spread in prepared pan. Beat cream cheese, sugar, egg and flour in same bowl until well blended. Spoon mixture over brownie batter. Swirl with knife to marbleize. Bake 40 minutes.

Heat oven to 350 degrees F. Microwave chocolate and margarine in large bowl on high 2 minutes or until margarine is melted. Stir until chocolate is completely melted. Stir sugar into chocolate until well blended. Mix in eggs and vanilla. Stir in flour and walnuts until well blended. Spread in greased foil lined 9x13 pan. Bake 30-35 minutes or until toothpick inserted in center comes out with fudge crumbs. Do not overbake! Cool in pan. Cut into squares.

Instead of buying expensive flavored coffees, we buy basic coffee (for the coffee maker) and sprinkle cinnamon on top of the ground coffee before turning on the machine.
