Fresh Tomato Soup
This simple soup is a great way to use your homegrown tomatoes this summer.
- 2 Tbsp. butter or margarine
- 1 1/2 Tbsp. all purpose flour
- salt & pepper, to taste
- 1/4 tsp. baking soda
- 3 fresh tomatoes, each cut in 8 wedges
- 1 cup milk
Melt butter or margarine. Blend in flour, salt and pepper. Cook for about 1 minute. Add baking soda, tomatoes, and simmer 5 minutes. Add milk, heat thoroughly and serve. Makes: 4 servings
