Swedish Nut Cake

My sister gave me this recipe years ago. I've made it many times and everybody just loves it. And so simple to make!

Ingredients:

  • 2 cups flour
  • 2 cups sugar
  • 1 1/2 tsp. baking soda
  • 2 eggs
  • 1 tsp. vanilla
  • 1/3 cup chopped nuts
  • 1 (20 oz.) can unsweetened crushed pineapple and juice
Frosting:
  • 1 (8 oz.) pkg. cream cheese
  • 1 stick butter
  • 1 tsp. vanilla
  • 1/3 cup chopped nuts
  • 3 cups powdered sugar

Directions:

Mix all together by hand. Bake in greased, floured 13x9 inch pan at 350 degrees F for 35-45 minutes.

Frosting: Mix with electric mixer. Spread frosting on cake while still warm.

Recipe: Swedish Nut Cake

Ingredients

  • 2 cups sugar
  • 2 cups flour
  • 2 eggs
  • 2 tsp. baking soda
  • 1 tsp. vanilla
  • 1 can crushed pineapple (20oz)
  • 1/2 cup nuts, chopped
Frosting:
  • 1 package cream cheese (8oz)
  • 1 1/4 cups powdered sugar
  • 1/2 cup nuts, chopped
  • 1 stick (1/4 lb.) margarine
  • 1 tsp. vanilla

Directions

Mix by hand: sugar, flour, eggs, soda, and vanilla. Add crushed pineapple (do not drain) and nuts. Mix well. Pour into ungreased 9x13 inch pan. Bake at 350 degrees F for 45-50 minutes.

Frosting:

Stir cream cheese, powdered sugar, margarine, vanilla together. Put nuts on top.
