Hawaiian Pie

In the 1960's my mother used to make the most delicious cold pie she called Hawaiian Pie. It used a prebaked coventional piecrust, and was filled with a layer of bananas and pecans, then a cooked custard filling, then more bananas, pecans and coconut, topped with whipped cream and more coconut.

I have looked for this recipe everywhere and have been unsuccessful. Did she make this recipe up? After my mother's death my stepmother got rid of all her cookbooks as she didn't cook. So I can't ask my mother and can't go through her recipes. I'm lost!

I've looked on the internet, but none of the recipes I've found have been the one. You had to let this pie set in the icebox for a day before eating and I would count the hours. I could eat a whole one by myself. Please, someone out there have this recipe from my childhood!

Scalloped Corn

Ingredients

  • 1 can whole corn (drained)
  • 1 can cream style corn
  • 1 cup milk
  • 1 egg (beaten)
  • 1/4 cup minced onion
  • 1 cup salting cracker crumbs
  • salt and pepper

Directions

Heat corn and milk in saucepan; add beaten egg and onion. Stir in cracker crumbs and salt and pepper. Place corn mixture in greased baking dish. Bake at 350 degrees for 30 minutes.

Quick and Delicious Roast Chicken

Ingredients

  • 3-5 pound Chicken

Directions

Microwave a 3 - 5 lb chicken on high for 5 minutes per lb. turning once halfway through cooking time. Meanwhile, heat oven to 425. Remove chicken from microwave and baste and season to taste. Place in pre-heated oven and roast for l5 minutes. Chicken will be tender, delicious and CRISPY!

Chicken Potato Cheese Casserole

Ingredients

  • 1 pkg. frozen hash browns
  • 2 cup Velveeta cheese (cubed)
  • 1 can cream of chicken soup
  • 1 carton sour cream (16 oz.)
  • 1 stick margarine (melted)
  • Potato Chips
  • 1 stick Butter

Directions

Mix together hash browns, velveeta cheese, chicken soup and sour cream. Put in 9x13 inch pan. Top with crushed potato chips and 1 stick margarine, melted. Bake at 350 degrees for 1 hour.

Pasta with Asparagus

Ingredients

  • 5 garlic cloves ( minced)
  • 1 tsp. dried red pepper flakes
  • 2-3 dashes hot pepper sauce
  • 1/4 cup olive oil
  • 1 Tbsp. butter
  • Salt (to taste)
  • 1 lb. fresh asparagus (cut into 1 1/2 inch pieces)
  • 1/4 tsp. pepper
  • 1/4 cup Parmesan cheese ( shredded)
  • 1/2 lb. mostaccioli or macaroni (cooked)

Directions

In skillet, cook garlic, red pepper flakes and hot pepper sauce in oil and butter for 2 to 3 minutes. Add asparagus; salt and pepper; saute' until asparagus is crisp-tender, 8-10 minutes. Add Parmesan cheese; mix well. Pour over hot pasta.

Carrots Glazed with Orange and Ginger Ale

Ingredients

  • 1 Tbsp. margarine
  • 3/4 cup orange juice
  • 1 1/2 tsp. minced fresh ginger or 1 tsp. ground ginger
  • 3 strips orange peel (each about 2 inches long and 1/2 inch wide)
  • 8 med. carrots (about 1 lb.; peeled and sliced 1/4 inch thick)

Directions

Melt margarine in medium size heavy saucepan. Add the orange juice, ginger and orange peel. Bring to a boil. Add carrots. Simmer, uncovered, until all the liquid has evaporated and the carrots are tender and glazed, 10 to 15 minutes. Serves 4.

Baked Carrots

Ingredients

  • 2 bunches carrots
  • 5 slices bacon
  • 1 med. onion
  • 3/4 can water or carrot water, tomato soup can
  • 1 can tomato soup
  • 1 tsp. sugar
  • salt (to taste)
  • pepper (to taste)
  • Grated cheese (optional)

Directions

Wash, scrape and slice carrots. Par boil 20 minutes and drain, reserving liquid. Cut up bacon and onion, brown. Put in greased baking dish and bake 1 to 1 1/2 hours at 325 degrees, depending on how thin you slice carrots. Sprinkle cheese on top if desired.

Strawberry Smoothies

My 10 year old daughter loves smoothies, so we developed our own recipe for a strawberry smoothie.

Ingredients

  • 1/2 bag of frozen strawberries
  • 3/4 cup milk
  • 1/2 cup vanilla ice cream
  • 1 Tbsp. sugar optional

Directions

In a blender combine 1/2 bag of frozen strawberries, 3/4 cup milk, 1/2 cup vanilla ice cream, (1 Tbs. sugar optional)

Blend until all ingredients are combined. If the mixture seems too thick, add a little bit more milk. If it seems too runny, add a little more frozen strawberries.
