Low Fat Homemade Biscuits

I would love to get some low fat recipes for homemade biscuits. I had a wonderful recipe for biscuits using instant potato flakes but lost it when I moved and I can not remember the recipe.

Pecan Crumb Cake

Ingredients

  • 1 cup flour
  • 1/4 cup sugar
  • 2 tsp. baking powder
  • 1/4 tsp. salt
  • 1/2 cup skim milk
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1 Tbsp. lemon juice

Directions

Sift together flour, sugar, baking powder and salt. In medium bowl using fork, beat milk, oil, egg and lemon juice until blended. Add dry ingredients; stir until blended. Pour batter into greased 8 inch round baking pan; sprinkle Pecan Topping evenly over top. Bake in 350 degrees F oven 35 minutes, or until toothpick inserted in center comes out clean. Cool in pan on rack 10 minutes before serving. Serve warm or cold. Makes 8 servings.

Pecan Topping:

In bowl, combine:

  • 1/3 cup sugar
  • 1/4 cup flour
  • 1/2 tsp. ground cinnamon

Using pastry blender, cut in 2 Tbsp. margarine until coarse crumbs form. Stir in 1/2 cup chopped pecans.

Pizza Buns

Ingredients

  • 1 lb. ground beef
  • 1 can tomato sauce
  • 3/4 tsp. salt
  • 1/4 tsp. garlic salt
  • 1/4 cup green olives (opt.)
  • 1 cup American cheese (diced)
  • mushrooms (opt.)
  • oregano
  • buns

Directions

Brown the meat. Stir in the rest of the ingredients except the oregano. Fill the buns with the mixture. Sprinkle with oregano. Place in a 9x13 inch pan. Cover with foil and bake 20 minutes at 325 degrees F.

Golden Chicken Rolls

Ingredients

  • 6 chicken breasts, skinned, boned and split
  • 12 thin slices ham
  • 12 thin slices Swiss cheese
  • 1/2 cup melted butter
  • 2 1/3 cups soft bread crumbs
  • 1/4 cup Parmesan cheese

Directions

Flatten chicken with a flat mallet or rolling pin. place slice of ham and slice of Swiss cheese on each. Roll like a jelly roll, folding in sides to hold ham and cheese. Dip each roll in butter, then in crumbs and Parmesan cheese. Bake in shallow roasting pan at 350 degrees F for 40 minutes or until golden brown. Makes 12 servings.

Mashed Potatoes, Cheese Mashed Potatoes

Ingredients

  • 2 lbs. potatoes, peeled, cut into 1 inch chunks
  • 1/4 cup butter or margarine
  • 1 cup Evaporated milk
  • salt and pepper

Directions

Place potatoes in large saucepan. Cover with water; bring to a boil. Cook over medium high heat for 15-20 minutes or until tender. Drain.

Return potatoes to saucepan; add butter and evaporated milk. Mash with potato masher or fork until smoothy. Season with salt and pepper. Note: Chopped green onions, chopped parsley or cooked, crumbled bacon may be added to mashed potatoes.

For Cheese mashed potatoes: Add 1 cup shredded cheddar, Swiss, Monterey Jack, Mozzarella or Parmesan cheese to hot mashed potatoes, stir until melted.

Boston Brown Bread

Ingredients

  • 1 cup raisins
  • 2 cups water
  • 1 cup sugar
  • 1 beaten egg
  • 1 Tbsp. shortening
  • 1 tsp. salt
  • 2 3/4 cups flour
  • 2 tsp. baking soda
  • 3/4 cup chopped nutmeats
  • 1 tsp. vanilla

Directions

Mix raisins with water. Boil 5 minutes and cool. Add sugar, egg, shortening and salt. Sift and add flour and baking soda. Add nut meats and vanilla. Grease and flour four or five round tin cans. Bake mixture in cans at 350 degrees F for about an hour.

Praline Confections

Ingredients

  • 24 graham crackers
  • 1 cup margarine
  • 1 cup brown sugar
  • 1 cup nuts

Directions

Spread graham crackers on a cookie sheet. Melt margarine, add brown sugar and boil for 2 minutes. Take off stove.

Add 1 cup nuts. Spread mixture on graham crackers.

Put in oven for 10 minutes at 350 degrees F.

Cool and cut into squares.

Pumpkin Crunch Cake

Ingredients

  • 1 yellow or spice cake mix
  • 1/2 cup water
  • 3 eggs
  • 1 can pumpkin
  • 1/2 tsp. burnt sugar flavoring (opt.)
  • 1/2 tsp. vanilla
  • 1 tsp. pumpkin pie spice

Filling and Topping:

  • 1/2 cup brown sugar
  • 1 tsp. cinnamon
  • 1 cup walnut meats
  • 1 Tbsp. flour
  • 3 Tbsp. melted butter

Directions

Put one half of the cake mixture into a 9x13 inch greased pan. Then, one half of the filling, then rest of the mixture, and finally, the rest of the topping. Bake at 350 degrees F for 30-45 minutes. Be sure the center is firm. Serve with whipped topping.

Cheese Franks

Ingredients

  • 8 frankfurters
  • 1- 1/2 cups mashed potato
  • 1 Tablespoon minced onion
  • Salt and Pepper
  • Butter
  • Cheddar cheese coarsely grated.

Directions

Split franks lengthwise, stuff with mashed potato to which onion, salt, pepper and plenty of butter has been added.

Now sprinkle with cheese. Broil until a golden brown. Remove and serve immediately.
