Looking For Simple Zucchini Bread Recipe

I cannot find a good, simple zucchini bread recipe. I know there is one that also has a little cocoa powder. My books have everything but bread.

Hi Pat! I think the recipe you are looking for is called: Chocolate Zucchini Bread. My cousin gave me the recipe last year & it is my all time favorite for any zucchini cake or bread. Just type Chocolate Zucchini Bread into your search bar and you should be able to find many recipes for it. Hope this helps!

This recipe I got from allrecipes.com and it's about the easiest I have ever seen. Here it is!

Zucchini Bread

3 eggs
1 c. vegetable oil
2 c. white sugar
2 c. grated zucchini
2 t. vanilla
3 c. flour
3 t. cinnamon
1 t. baking soda
1/4 t. baking powder
1 t. salt
1/2 c. chopped nuts (opt.)

Preheat oven to 325. Grease and flour two 8x4 loaf pans. In large bowl, beat eggs till light and frothy. Mix in oil and sugar. Stir in zucchini and vanilla. Combine flour, cinnamon, soda, baking powder, salt & nuts; stir into egg mixture. Divide batter into prepared pans. Bake 60-70 minutes or until done.

Zucchini Bread

3 eggs
2 cups of sugar
1 cup of vegetable oil
2 cups of raw zucchini, grated & peeled
3 teaspoons of vanilla
3 cups of flour
1 teaspoon of salt
1 teaspoon of baking soda
1/4 teaspoon of baking powder
3 teaspoons of cinnamon
1 cup of chopped nuts (optional)
1 cup shredded coconut (opt-but EXCELLENT)
1 cup raisins

Beat eggs until light and foamy. Add sugar, oil, zucchini and vanilla. Mix lightly, but well. Combine flour, salt, soda, baking powder and cinnamon. Add to egg-zucchini mixture. Stir until well blended; add nuts and pour into 2 (9"x5"x3") loaf pans. Bake in preheated 350ºF. oven for 1 hour. Cool on rack.

This is a great website, I baked several loaves of zucchini bread and cut the amount of sugar in half. Some of the recipes are way too sweet for me.

This is one of the best Zucchini Bread recipes I have ever had..
I think it is the cream cheese that makes it so tasty
and moist.
Extra special Zucchini Bread

3 eggs
2 c sugar
1 cup oil
1 t. vanilla
8 oz soft cram cheese
2 c flour
1 t bake soda
1 t bake powder
1 t cinnamon'
1 t salt
1/2 t nutmeg
2 c walnuts (I used pecans)
2 c shredded zucchini

350 degrees grease and flour 2 loaf pans or 7 small loafs

beat eggs, sugar, oil, and vanilla til smooth beat in cream cheese

in a large bowl, whish flour, soda and B. powder cinnamon salt and nutmeg. gradually beat into the egg mixture

Fold in nuts and zucchini evenly divide batter into pans..Bake large pans 60 min and 35 min for the small ones. Done when toothpick comes out clean

cool in pan 10 min turn out and cool completely

I'm adding to Starchilds from VT. recipe, that I add about 1/4 teaspoon of cloves , I have been busy making zucchini bread and freezing it for my company at the end of the month. Enjoy

This is sortof easy...enjoy
COMBINE:
3 cups grated zucchini
1 cup oil
1 1/2 cups sugar
3 eggs beaten
1 teaspoon vanilla

SIFT IN TOGETHER, AND STIR TO BLEND:
3 cups flour
1 1/2 tsp baking powder
1 tsp baking soda
1 1/2 tsp cinnamon
1 tsp salt
1/2 ginger

ADD 1 cup chopped nuts 1 cup raisins AND BEAT 4 MINUTES. PLACE IN GREASED LOAF PAN AND BAKE ONE HOUR AT 350 DEGREES.
