My cousin gave me the recipe last year & it is my all time favorite for any zucchini cake or bread. Here it is! Zucchini Bread 3 eggs 1 c. vegetable oil 2 c. white sugar 2 c. grated zucchini 2 t. vanilla 3 c. flour 3 t. cinnamon 1 t. baking soda 1/4 t. baking powder 1 t. salt 1/2 c. chopped nuts (opt.) Preheat oven to 325. Grease and flour two 8x4 loaf pans. In large bowl, beat eggs till light and frothy. Mix in oil and sugar. Stir in zucchini and vanilla. Combine flour, cinnamon, soda, baking powder, salt & nuts; stir into egg mixture. Divide batter into prepared pans. Bake 60-70 minutes or until done. Add sugar, oil, zucchini and vanilla. Mix lightly, but well. Combine flour, salt, soda, baking powder and cinnamon. Add to egg-zucchini mixture. Stir until well blended; add nuts and pour into 2 (9"x5"x3") loaf pans. Bake in preheated 350ºF. oven for 1 hour. Cool on rack. PLACE IN GREASED LOAF PAN AND BAKE ONE HOUR AT 350 DEGREES.
